This Friday’s YouTube recipe is something I’ve been meaning to make more often in the last two years but now I have a parsley plant in my kitchen, I’m all over it (I just need more plants).
It’s simple, full of flavour, quick and healthy. Ticks all of my boxes if you ask me! It’s suited my week well as I’ve had a few furniture restoration projects on my hands and this Menu blackboard was also a quickie I fitted in. It was a £1 charity shop find, some old spray paint and a little bit of Wilko’s blackboard paint, so if you would like to learn how to make one, here is my tutorial on my other YouTube channel, Vikkie’s Vintage.
So getting back to the recipe, because that’s what you’re really here for, right?
You will need:
80g dried spaghetti per person
160g tin of tuna in water or brine, drained
Zest & juice of half a lemon per person
100ml pasta water per person
Fresh parsley. chopped (a good handful per person)
Tesco Extra Virgin Olive Oil Spray or similar (a spritz per serving)

1. Cook the spaghetti until al dente.
2. Meanwhile grate and juice the lemon in to a large frying pan, including the pasta water and seasoning and simmer gently for 5 minutes until half has evaporated and take off the heat.
3. Now stir in the parsley, tuna and add the spaghetti and make sure everything is coated.
4. Serve then spritz with the olive spray, season again if needed and add a touch of parsley on top.
