If you’re a person in demand and haven’t had time to prepare a healthy yet comforting meal in advance, then say hello to your new best friend! This quick stew is perfect as a chuck-everything-in-the-pan buddy and takes 30 minutes to make, yet still tastes lovely.
It’s full of veg and the secret ingredient is a cupboard staple of syn free tin stewed steak and why not serve it with a healthy extra wholemeal roll to dip in?
Here’s the recipe!
392g tin of stewed steak (mine was from Asda)
400g tin of chopped tomatoes
1 celery stick, sliced
1 onion, finely choppped
1 small potato, peeled & chopped
60g frozen peas
1 medium carrots, peeled & chopped
2 bay leaves
1 garlic clove, crushed
2 beef stockpots or stock cubes
1 tsp paprika
1 tsp ginger
1/2 tsp sweetener
1 tbsp tomato puree
1 tbsp basil

- Chuck everything in to a large pan, cover & simmer for 30 minutes, stirring occasionally: *Or, as someone has suggested, you could stir in the stewed steak in at the end of the cooking time if you want to keep the steak chunks hole, otherwise it will break up.
- 5 minutes before the end, stir in the basil, place the lid back on and continue to simmer and serve.
