This Friday’s YouTube video featured me showing you how to line a Christmas cake tin to prevent burning when cooking for a long period of time. This is the only method I use when I bake my Christmas fruitcakes as the thought of ruining something I’ve spent a long time making breaks my heart. I’ve never had a failure and would definitely say it’s foolproof, apart from the odd lid burning near a gas flame but I’ve learnt my lesson over the years and for that reason, I wouldn’t recommend nipping out to the shops while it’s cooking. But don’t let this put you off as it works like a charm every time.
