Looking for Christmas leftover turkey recipes on Slimming World after a few days of indulging? This delicious turkey and leek pie with potato topping is the answer! With shredded turkey and vegetable chunks in a Mediterranean herby sauce, with a low-fat cheesy mash.
I'm going to let you into a little secret. Turkey is one of the least favourite meats in my household.
It gets a bad rap for being dry, so when I cooked my first turkey Christmas dinner a few years ago, I turned to Delia Smith and added layers of bacon and butter. You can read more tips on cooking turkey here.
And the turkey was so big, my parents and brother took leftovers home and I still had plenty. So that's where this turkey, leek and potato pie came in.
Healthy Turkey and Ham Pie Adaptation
While I've been blogging, I've had the most fun adapting some of my old favourites that weren't so healthy.
If you've got turkey leftover from Christmas and you're not quite ready to go back to healthy meals yet, then look for Angela Hartnett's Turkey, Leek & Ham Pie. It's incredible!
But because my eating habits are leaner these days, I couldn't wait to adapt and share this with you.
Slimming World Adaptation
Traditionally, I'm sure you'd expect a turkey leek pie to have puff pastry, or shortcrust. However, this would be very high in syns if looking for a Slimming World turkey and ham pie.
Instead, I've created this Slimming World turkey pie with a mashed potato top mixed with low-fat grated cheddar cheese.
Alternatively, you could try scrunched-up filo pastry squares if you miss a bit of crunch.
Recipe - Serves 4
- Frylight
- 500g leftover cooked turkey, chopped in to bite size pieces
- 1 large onion, diced
- 2 carrots, peeled & sliced
- 2 large leeks, sliced
- 1 large potato, peeled & grated (around 230g)
- 300ml ham stock
- 1 tablespoon basil
- 1 tablespoon oregano
- Seasoning
- Sprig of fresh thyme
- 500g leftover mashed potatoes (or 550g raw potatoes cooked and mashed)
- 40g low fat cheese, grated
Method
- Preheat your oven at 200c fan/220c/Gas mark 7/425F.
- Spray an oven proof cast iron pot or similar with frylight and saute the onion until tender.
- Now add the potato, carrots and leeks and continue frying for another 5 minutes.
- Stir in 300ml of chicken stock and give everything a stir, then bring it to a boil.
- Now lower the heat, pop a lid on it and simmer for 10 minutes, stirring half way.
- Once that's done, stir in the herbs, seasoning and turkey and level the top.
- Spoon and level on top the mashed potatoes and sprinkle with the cheese.
- Pop in the oven to bake for 30 minutes or until bubbling around the edges.

Turkey and Leek Pie with Potato Topping
Ingredients
- Cooking oil spray
- 500 g Cooked turkey chopped into bite size pieces (2.5 cup)
- 1 Onion diced
- 2 Carrots peeled & sliced
- 2 Leeks sliced
- 1 Large potato peeled & grated (as a natural thickener)
- 300 ml Ham stock
- 1 tablespoon Dried basil
- 1 tablespoon Dried oregano
- Pinch Salt
- Pinch Ground black pepper
- Sprig Thyme
- 500 g Leftover mashed potatoes (or 550g raw potatoes, peeled, boiled and mashed) (2.3 cjups)
- 40 g Low-fat cheddar cheese, grated (⅓ cup)
Instructions
