When you’re camping like I am at the minute, sometimes you need the quickest of quick recipes and usually when we need food fast, this is when most people make really bad decisions. But what helps is knowing a really quick and delicious recipe that, like this one that truly only takes 10 minutes max with store cupboard essentials. As long as you stock up on ingredients before you set off on your jollies, you’re laughing.
All you need is a large saucepan and it’s a one pot wonder. Also, it is worth noting that the vegetables you add are flexible, but if you start adding firmer root vegetables, it’s going to take much longer to cook in the stew.
If you don’t have as much time, try and opt for soft things like fresh mushrooms, peppers, tinned peas etc. Another alternative could be swapping the tinned tuna in brine for syn free Marks & Spencer’s stewed steak.
1 onion diced
1 yellow pepper, deseeded and diced
1 tin of Tuna ib brine, drained
1 tin of baked beans in tomato sauce
1 tin of chopped tomatoes
250ml passata (optional)
1 veg stock cube
1 tsp tumeric (or cumin, basil, oregano etc)
1 tsp ground coriander
1/2 tsp mustard powder
A splash of balsamic vinegar

1. Spray a large saucepan with frylight and saute the onion and pepper for five minutes.
2. Add seasoning and herbs and spices, then add any other vegetables you desire to bulk it up and add all the other ingredients and simmer for five minutes.
3. Serve alone or a suggestion could be with a 60g wholemeal each, with low fat spread.
