Quick and delicious unofficial Slimming World vegetable soup with garlic croutons.
If someone asked me why I head for soup for often then not, then I would have they can be the easiest, quickest and cheapest meals to make. Take 5 minutes for prep and chuck in my Morphy Richards Soup Maker and leave it to do the work 21 minutes of work on a meal that can last over 4 lunches. Oh and less washing up of course.
So again, with Christmas around the corner, my home office job is so busy, I need something quick, healthy but still tasty, so I hope this helps someone out there also.
Today's soup offering is vegetable soup, but as there are so many boring soups out there, this is quite the contrary. You'll need some ginger, chilli and garlic which makes it yummy, but if you don't, just experiment with other flavours you have in the home. The fresh ginger however, gives it a delicious warming feel like a cuddle in a bowl, so avoid skipping that ingredient! Here it is for you!
Recipe
3 smallish leeks (380g), chopped
2 carrots, peeled & chopped
2cm fresh ginger, peeled & chopped
100g Broccoli florets
300g medium potato, peeled & chopped
3 beef stock cubes
1 small garlic clove, gently crushed with the side of a knife
¼tsp garlic salt
½ of a small orange/red chilli, de-seeded & chopped
900ml water
Seasoning
Croutons (using Slimming World allowances):
Dice 1 small slice of wholemeal loaf, spray with garlic frylight & air fry for 3 minutes or oven roast them.
Method
- Chuck everything except the soup maker and set to blend. If using a regular pan, simmer for 25 minutes or until every is tender and blend.
- Top with croutons and grated cheese from your healthy extra.

- 900 ml water
- Seasoning
Croutons (using healthy extras):
- 80 g wholemeal bread slice, diced in to cubes *to be counted or used as your allowance
- Frylight garlic flavoured
Instructions
- Chuck everything except the soup maker and set to blend. If using a regular pan, simmer for 25 minutes or until every is tender and blend.
- Spray the wholemeal bread cubes with garlic frylight and air fry for 3 minutes. Or toast in the oven for about 5.
