I’m all about quick wholesome breakfasts and mornings are not the time to be slaving over your stove when you’ve got to start the day and get through your to do lists. Usually I make a bowl of porridge but sometimes I need something savoury, which is where my breakfast casserole comes in to it. Although it’s vegetarian, this could be easily fixed with a bit of cooked sausage or fat free bacon and can be cooked an oven proof bowl in the microwave, oven or better still, the airfryer if you’re just making for one.
1 onion, finely diced
45g/ Half of a small courgette, grated
20g lower fat cheese, grated (healthy extra)
Salt & pepper
2 tbsp skimmed milk (healthy extra)
- Saute the onion in frylight on low heat in a frying pan until tender
- In an oven proof bowl, mix together the rest of the ingredients and stir in the onion once cooked.
- Place in airfryer for 10 minutes on 180 or until set and golden.
And it’s ready to eat!
