
The reduced veggies in my local supermarket are a god send for experimenting with new flavours! I do it all the time and most have been wonderfully delightful, although there’s been the odd mishap that just doesn’t cut it to post on here. Well, on Sunday, I found picked quite a few bunches of spring onions; they’re so versatile and am surprised how much shops charge for them these days.
I’d like to think that my site is a little soup bible for anyone who’s lucky enough to find bulk of something to save yourself some money and healt, so here’s my latest Cheese & Onion syn free soup – perfect for the soup maker which is a bonus or a good old fashion pan and blender!
Recipe – Serves 4
Ingredients
Frylight
1 clove of garlic, chopped
300g potato, peeled & diced
600g spring onions, heads trimmed and roughly chopped
1 & 1/4 tsp of dried thyme
Seasoning
800ml water
2 chicken or vegetable stockpots or 3 cube
100g lower fat grated cheddar (part of your healthy extra) and extra for serving
Method
- Heat the frylight in a large frying pan and saute the onions, potato and garlic for around 10 minutes on a medium to low heat
- Transfer to your soup maker and add the remaining ingredients except the cheese and set to blend. If you are using a pan, simmer for 20-25 minutes and blend, then stir in the grated cheese.
- Add extra seasoning to taste and top with extra cheese and enjoy!
