
I got all giddy with excitement on Friday when I got to try the latest launches from my favourite pottery brand, Denby. If I’m not eating off their Halo range that I’ve had for 5 years, then I’m usually dishing up family meals on our Natural Canvas set.
I’ve always appreciated that each piece has a Northern heritage, like me, and hand crafted to a luxuriously high standard. Just hold a plate or mug in your hands and you’ll see what I mean. Every piece feels wholesome and practical to last a life time, not just for sitting pretty in a display cabinet. And what I love about my investment set is that Denby are always bringing out new variations like this new Halo square oven dish* and a 20cm 2.4 ltr cast iron lidded casserole dish* that match my beauties.
Both pieces are very elegant. The Halo oven dish is the perfect shape for a deep filled pie or pudding and don’t be fooled by the size of the 20cm casserole dish which has a 2.4 ltr capacity. I do own a larger Denby cast iron dish but don’t think I’ve ever actually filled it to the top.
And now plums are in season, there was was no better way than to create this scrummy Plum Cookie Crumble recipe that I adapted from Nigella. (Thanks to @silverlglady who suggested it on my Instagram photo when I asked for new ideas!) So far I’ve made Plum Jam for Christmas gifts, a James Martin steamed pudding and now this delightful treat!
Recipe – Serves 6 – 8
- 30g butter
- 1kg ripe plums, stoned & quartered
- 2 tbsp granulated sugar
- 1/2 lemon (zest & juice)For the Cookie Crumble
- 100g chocolate chip cookies, bashed or processed in to crumbs
- 150g plain flour
- 1 tsp baking powder
- 100g butter, cubed
- 3 tbsp granulated sugar

- Preheat your oven on 190 degrees or gas mark 5.
- In a lidded pan, gently melt the butter and add the quartered plums, sugar and lemon juice with zest giving it a good stir. Then over medium heat, cook for 2 minutes without the lid following with 2 minutes with the lid.
- Pour the plums in to the deep square dish and now to make the crumble.
- In a large mixing bowl, mix together the flour and baking powder then rub in the cubed butter until you get crumbs.
- Stir in the sugar with a fork and finally, mix in the cookie crumbs and sprinkle over the plums, ensuring everything is covered.
- Place the baking dish on to a tray and bake for 30 minutes and serve with ice cream or custard.

Hi Vikkie. I’m contacting you re: your salted caramel crumble which I’d really like to do. However, I cannot find salted caramel flavouring. Waitrose do one but my nearest store is not near! Can you suggest where else to look. Thank you
