I've been leading a double life behind my food blog over the past year. And it's a life where I've needed lot of energy, muscles, time and attention.
So what have I been up to? Well, I've been saving money by taking on my own DIY and Home Renovation projects like laying my own patio building decking and I've been loving every minute of it! In fact, to my surprise, I've been nominated for two DIY blogging awards this year.

But one drawback, which I can totally empathise with, is anyone who's truly time starved. Sometimes healthy eating will take a back seat if we're caught short for whatever reason it may be.
Or, if you get in the zone with something, like I can, then sometimes I'm so busy, I don't even think about food until hunger strikes and then it's too late.
So, I've needed quite a few back up plans straight from my freezer. And the most recent eats on our plates have been these yummy vegetarian Good Life meals.
Thankfully, they're not only delicious, they're also low in fat and high in protein too.
So, over the weekend, we had one of our many working lunches in our newly landscaped back garden without much of a worry.
After cooking both the 3 Bean Chilli and Vegetable Masala with Cauliflower Rice, (my fiance and I ate half and half), it was perfect that they shared the same cooking time. Score!
Both were decent sized portions, although we felt we'd earned the garlic bread on the side for our manual labour efforts.
But it may also come to a surprise to you that this was (I think), the first time I'd tried cauliflower rice. And you know what? I didn't miss the normal stuff one little bit. It had a good bite, so was a great substitute.
If I had to pick one as a favourite though, then it would definitely be the Vegetable Masala, hands down.
I'm a curry fiend and loved its sweet, smooth taste. It really tastes like it's been on a long, slow cooking process to caramelise all the ingredients.
But after learning last month that Masala is traditionally very hot, I distinctly noticed that this wasn't. I know heat isn't everyone's thing, so it's a safe option for almost everyone's palate.
And although I would never normally opt for a bean chilli of any kind because I had an overkill back in my vegan days, this is actually one of the nicest ones I've eaten. And you can still squeeze in 3 of your 5 a day with each convenient offering.
