I’m clearly obsessed with my new Meridian 100% nuts peanut butter at the minute and had a good think and internet browsing for a satay sauce for a chicken wrap and found a beauty which I adapted. It was so divine, I wanted to experiment with more combinations for my evening meal with my fiance too. I told you I am obsessed(!) And after a day of practicing, I have one healthy little number left over for lunch tomorrow, then that’s it, I’m officially wrapped out for a short while.
The Chicken Satay Wrap – Serves 1
1 handul of cooked chicken
1 spring onion, sliced
A handful of chopped lettuce
1 tbsp extra light mayo
For the satay sauce:
1 tbsp peanut butter (100% peanuts where possible)
1 tbsp healthy boy sweet chilli sauce
1 tsp of water
1/2tsp light soy sauce
1. Mix the sauce together and spread over the tortilla.
2. Next layer the chicken, salad and mayo on top.
3. Roll into a wrap and envelope in tin foil
4. Eat and enjoy!
Quick Avocado, Chicken & Lime Lettuce Boat Wraps
I have been needing and wanting to use up my avocados before they turn on me and half a lime cling film wrapped up in the fridge. I just can’t escape the word wrap today! I cannot in no way take credit for this recipe, apart from adding a dash of honey for a sweeter edge. On the very odd occasion like today, I followed a recipe to the letter. I could virtually taste this before I made it, so did not want to change it at all. It was totally divine. A must-try, definitely.
The recipe is from the cooking blog, Daily Rebecca. I agree with the majority that rated it as 5/5 on her site. And they’re so flipping quick to make!
4 long lettuce leaves
10 cherry tomatoes, quartered
1 avodao, mashed
Juice of 1/2 a lime
2 tbsp diced onion
1/4 diced red pepper
Mix well all the ingredients together and spoon over the lettuce leaves. I think this would also taste amazing with sweet chilli if you wanted to try.
The Classic Healthier Chicken and Chicken Wrap – Serves 4
This one was really for my fiance for when he got home from work. I did quite a bit of research on the best and found using 1/4 tsp of ground cumin or tumeric and you’re on to a winner. I had no cumin in, so that was a quick decision. You can really taste how it gives the onions a sweet, warm smoother taste. A little bit like eating a chicken kebab. Some say to add a little bit of mint. Couldn’t find it. Bugger. So this is what I came up with. I think it beautifully personifies a little bit of what you fancy does you good. There’s minimal bad fats and you know what’s gone in to it! I’d have this over a KFC any day. In fact, I had a uni job at KFC and quit after two weeks, turning vegetarian then vegan for 4 years the moment I left. Every night I came home stinking, trying to rub the grease off my skin. Yuck. I’m sure you can imagine how disgusting it was.
350g chicken strips
1/4 tsp tumeric
1/4 tsp mint (optional)
Frylight or olive oil
1 finely diced onion
1 red pepper, sliced or diced
20g lower fat mature cheese, grated
Extra light mayonnaise
Lettuce and salad of your choice
Simple Yoghurt & Mint Sauce Dip
1 tbsp fat free natural yoghurt
1 tsp mint sauce
1. Saute all the onion, pepper and seasonings, mixed with the cooked chicken in frylight or 1/2 olive oil.
2. Spoon in to the wraps, sprinkle with lettuce and cheese. You could add whatever salad you want.
3. Now fold over the wrap and wrap tin foil around them to close securely together.
4. Serve with whatever chips you want, (the healthier the better of course). I served my fiance’s with fries to keep him sweet!
