A delicious Slimming World gumbo that can be made in the pan, oven, slow cooker or multi cooker.

Ingredients

  • Low calorie cooking oil spray
  • 3-4 chicken breasts diced
  • 6-8 low fat sausages (I used MOR chicken sausages = 1 syn each
  • 1 onion diced
  • 2 sticks celery chopped
  • 4 bay leaves
  • 1 tsp cajun seasoning
  • 1 tin chopped tomatoes
  • 40 g oats Healthy Extra B
  • 300 ml chicken stock
  • 1/2 tsp red or white wine vinegar
  • 1/2 tsp Worcestershire sauce
  • 2 garlic cloves minced
  • 2 sprigs thyme
  • Seasoning

Instructions

  • Spray a large frying pan with cooking oil spray and sear the sausages for 5 minutes.
  • Spray a large frying pan with cooking oil spray and sear the sausages for 5 minutes.
  • Now add the chicken and cook until golden brown.
  • Next throw in the onions to saute and remove everything from the heat.
  • Then slice the sausages in to 2-3cm chunks and transfer them, the chicken and onions to a slow cooker.
  • Add the rest of the ingredients, pop the lid on and cook on low for around 6-8 hours or high for 3-4 hours.
  • Serve with rice or whatever you fancy.
