Chorizo and Butternut Hash: Slimming World Low Syn

Slimming World Chorizo and Butternut Hash recipe is one of my favourite one-pan dishes.  It’s only 2.5 syns per serving with a touch of Spanish spice and is versatile for breakfast, brunch or dinner.

Ingredients

  • Low calorie cooking oil spray
  • 1 onion halved and sliced
  • 1 clove garlic minced
  • 600 g butternut squash peeled and diced
  • 56 g chorizo *2.5 syns per 28g
  • 4 bacon medallions fat removed
  • 2 eggs
  • 1 tsp hot paprika
  • Fresh parsley to garnish
  • Seasoning

Instructions

  • Preheat your oven on 200 degrees.
  • Using an ovenproof frying pan, spray with cooking oil spray.
  • Add the onions and garlic and gently saute until softened.
  • Then add the butternut, chorizo, bacon and seasoning, then continue to fry for 5 minutes, stirring occasionally.
  • Now pop in the oven for 20 minutes.
  • Remove from the oven and crack on top 2 eggs and return to the oven for a further 5 minutes or until the eggs have set and yolk is still runny.
    OR: pan fry separately in a frying pan using Frylight and place on top.
  • Serve and sprinkle with freshly chopped parsley.
