Ingredients

  • oil spray
  • 6 eggs
  • 200 g fat free natural yogurt
  • 1 red onion diced
  • seasoning
  • 120 g lower fat cheddar cheese grated
  • 6 bacon medallions All fat removed and diced

Instructions

  • Firstly, preheat your oven at 160 degrees.
  • Now spray a frying pan with oil spray and saute the onions until softened.  Then add the bacon and continue to fry until golden and set aside.
  • Next, in a large mixing bowl, crack in the eggs and whisk.
  • Follow on by stirring in most of the cheese and then season.
  • Now spray a 24cm quiche dish with oil spray and layer in the onion and bacon.
  • Then spoon in the egg and cheese mixture and smooth over with the back of a spoon.
  • Place in the middle of the oven for 25-30 minutes until golden and serve.
