- 6 eggs
- 200 g fat free natural yogurt
- 1 red onion diced
- 120 g lower fat cheddar cheese grated
- 6 bacon medallions All fat removed and diced
Firstly, preheat your oven at 160 degrees.
Now spray a frying pan with oil spray and saute the onions until softened. Then add the bacon and continue to fry until golden and set aside.
Next, in a large mixing bowl, crack in the eggs and whisk.
Follow on by stirring in most of the cheese and then season.
Now spray a 24cm quiche dish with oil spray and layer in the onion and bacon.
Then spoon in the egg and cheese mixture and smooth over with the back of a spoon.
Place in the middle of the oven for 25-30 minutes until golden and serve.
