Ingredients

  • Oil spray
  • 300-500 g gammon joint all fat removed
  • 2 cloves garlic minced
  • 1 onion diced
  • 2 tsp sweetener
  • 2 tsp balsamic vinegar
  • 2 tsp oxo bbq seasoning
  • 1 tsp oregano
  • 1 tsp mixed herbs
  • 1/3 tsp chilli powder
  • 60 ml red wine vinegar
  • 60 ml water
  • seasoning

Instructions

  • Soak the gammon in cold water for 2 hours.  Then discard the water and replace with clean water – enough to cover the gammon and simmer for 1-2 hours.
  • Drain the gammon and place in an oven dish and shred up with two forks, pulling away from each other.
  • Preheat the oven on gas mark 6 and place the margarine in to a saucepan and gently heat until melted.  Now add the garlic and onions and saute once the garlic starts to brown.
  • Add all the remaining ingredients to the saucepan and simmer for 10 minutes until it starts to thicken.
  • Now pour all over the gammon and mix it until all the gammon has a good coating.
  • Place in oven for 10 minutes and it is ready to serve in to bread buns or alone with chips/vegetables.
