- Oil spray
- 300-500 g gammon joint all fat removed
- 2 cloves garlic minced
- 1 onion diced
- 2 tsp sweetener
- 2 tsp balsamic vinegar
- 2 tsp oxo bbq seasoning
- 1 tsp oregano
- 1 tsp mixed herbs
- 1/3 tsp chilli powder
- 60 ml red wine vinegar
- 60 ml water
Soak the gammon in cold water for 2 hours. Then discard the water and replace with clean water – enough to cover the gammon and simmer for 1-2 hours.
Drain the gammon and place in an oven dish and shred up with two forks, pulling away from each other.
Preheat the oven on gas mark 6 and place the margarine in to a saucepan and gently heat until melted. Now add the garlic and onions and saute once the garlic starts to brown.
Add all the remaining ingredients to the saucepan and simmer for 10 minutes until it starts to thicken.
Now pour all over the gammon and mix it until all the gammon has a good coating.
Place in oven for 10 minutes and it is ready to serve in to bread buns or alone with chips/vegetables.
