If you're a big fan of crumbles, you'll love this easy apple and blueberry crumble! With sweet apples, juicy blueberries, and a crispy, crunchy topping with oats, it's the perfect sweet dessert for the whole family.
5Granny Smith applespeeled (if you wish), cored and chopped into small chunks
60gGranulated sugar(¼ cup)
½Lemonzest and juice (1 tablespoon of juice)
½teaspoonGround cinnamon
350gBlueberries(1.5 cups) - I use a frozen as they are cheaper
1.5tablespoonPlain flour(AP flour)
Crumble Mixture
110gPlain flour(1 cup) - All Purpose flour
110gButter(½ cup or 1 stick) melted
95gRolled oats(1 cup)
140gSoft light brown sugar(¾ cup)
½teaspoonVanilla extract
Instructions
First, preheat your oven to 160c fan, 180c, gas mark 4 or 350F.
Then combine all of the fruit filling ingredients into a large bowl and mix thoroughly.
Now spoon it into your desired baking dish or dishes.
In a medium bowl, combine all of the crumble topping dry ingredients together.
Then pour in the vanilla extra and melted butter and mix again until itforms pebbles.
Now spoon over and spread the oaty crumble mix on top.
Place in a preheated oven and bake for 35-45 minutes until golden.
Then place it on a wire rack to allow it to cool slightly before serving it with custard or ice cream.

Notes
To minimise the chances of the crumble topping sticking to the sides of the pan, you can coat the dish with cooking spray before filling.
For a more even crumble topping, allow the melted butter to cool slightly before mixing it with the dry crumble ingredients
Use tart apples such as Granny Smith, Gala, or Bramley cooking apples to balance out the sweetness
Add some nuts like pecans, walnuts, and almonds to the crumble topping for extra crunch. This will also add some healthy fats and protein
Feel free to add dried fruit such as raisins, cranberries, and chopped apricots to the apple mixture. Or stir in Christmas mincemeat for a festive taste
You can make up the crumble topping ahead of time with leftover bits of flour, butter, and sugar. Then store it in the freezer ready to use when needed
