Got stale bread? Then you'll love making this decadent and easy cheese pudding recipe. Let each slice soak up eggs, cream, milk, and cheese, then bake together with tangy onions caramelised in a herby butter and port.
250gWhite bread (about 5 thick slices)cut into 1" chunks, or breadcrumbs

135gSingle cream(½ cup + 1 tbsp) or Half and half

Instructions
Add the butter, garlic, and onions in a large saute pan.Then fry while stirring constantly for 3-4 minutes until softened over medium heat.
Now add the port, balsamic vinegar, and herbs.Continue frying for about 1 minute, or until all the moisture has evaporated and set aside.
To create the egg custard, start by whisking the eggs until smooth and frothy in a large bowl.
Add the milk, cream, salt, pepper, and mustard.Whisk again until smooth.
Stir in ¾ of the cheese and the diced bread and mix gently.If you have hard stale bread, cover it with plastic wrap and leave for 10 minutes for the bread to soak up the milk mixture.
Next grease a ceramic baking dish with butter.Then add half of the cheesy bread mixture and spinkle with half of the caramelised onions.Repeat again for the 2nd layer and sprinkle the remaining cheese on top and bake for 30-40 minutes until golden brown and set.

Note, this is perfect for using day-old French baguettes or other dry bread, so save them for this recipe!
If using fresh bread, you can bake in the oven until dry for 10 minutes, or leave on the kitchen counter overnight to harden
If parts of the top is looking too brown, you can cover with tin foil and continue to bake
