Add the olive oil to a large Dutch oven or large pot with a lid.Then saute garlic, chopped vegetables, and diced turkey until browned.
Now add the curry powder, Italian seasoning, and salt and pepper. Then fry for another minute.
Rinse and drain the lentils to remove any small pebbles, then add to the pot along with everything else except the coconut milk.Bring to a boil over medium-high heat and reduce to a lower heat.
Cover and simmer for 50 minutes over medium to low heat until the lentils are tender.Stir every now and then to ensure it doesn't catch at the bottom of the pot. Then stir in the coconut milk and ladle soup into warm bowls.
Stir in some lemon juice if using and fresh parsley or coriander.
