This healthy baked chicken nuggets recipe is the perfect replacement as a KFC fakeaway or McDonald's chicken nuggets. They're also delicious, much easier to make than you think and you know exactly what you've put in them!
Preheat your oven on 190c fan or gas mark 5 and line a baking tray with baking paper or silicone mat baking tray.
Whiz the bread and all the herbs and spices in a food processor to fine breadcrumbs.
Now pour the breadcrumbs in a bowl and in a separate bowl, whisk the eggs with a fork.
Then dip each piece of chicken in the eggs to give them a coating, then dip each one in to the crumbs and place on the baking tray.
Once everything is coated, place in the oven for 20-25 minutes and serve with chips and beans or whatever you wish!

Don't forget, if you don't have these ingredients, just experiment with the ones you do have which is what I do every time I make them. Eating healthy really doesn't mean you have to suffer and this recipe really is proof of that!

Traditionally, fried chicken nuggets, such as McNuggets and KFC popcorn chicken has a flour, spices and egg batter. Each chicken piece is coated, then deep fat fried quickly in oil.And while homemade chicken nuggets baked in wholemeal breadcrumbs is a much longer process, we like the lower fat content.
