If you want to, soak the gammon in cold water over night and drain to remove any excess salt.
Trim all the visible fat off the gammon joint and place in the slow cooker.
Add everything else to the slow cooker, cover and cook for 5 hours, set on high or low for 7-8 hours.
Remove the gammon and shred up and return to the pot before and allow to cool for 30 minutes and slightly thicken.
If you prefer to thicken more, leave it on high for an extra hour without the lid. OR, scoop out ¼ of the juice and cool for a few minutes, then stir in 2 tablespoon of cornflour and stir into the slow cooker until thicker.
