Slow Cooker Rice Pudding

Ingredients
- 4 oz Pudding rice (Or 114g/ ⅔ cup) *For Slimming World plans: this needs to be counted if not using milk as your allowance
- 1 litre Alpro unsweetened almond milk (4 & ¼ cups) *For Slimming World plans: Each serving uses 250ml of your 400ml almond milk allowance
- 1 teaspoon Ground cinnamon
- 2 tablespoon Sweetener *For Slimming World plans: = estimated as 1 syn in total, or more if desired
- ½ teaspoon Vanilla extract
- Toppings of your choice fresh fruit, raisins, dried coconut, banana, etc

Instructions
- Place the rice in the slow cooker.
- Pour in your chosen milk.
- Add the vanilla extract or seeds from a pod, ground cinnamon, sweetener or sugar and stir.
- Place the lid on and cook on low for 4 hours and enjoy with toppings of your choice.

If this slow-cooker rice pudding recipe being naturally vegan isn't important, you can thicken it with an egg mixture:
- Whisking an egg and 2 tablespoons of milk together
- Stir in a small amount of cooked rice pudding quickly to avoid the egg cooking
- Pour back into the pot and cook high for 10-15 minutes until thickened
