Thai Canned Mackerel Soup With Courgette Noodles (Keto)
Quick and easy thai coconut canned mackerel soup with courgette (zucchini) noodles. It's low carb, so perfect on a Keto diet, full of peppers, onion and coconut. Includes easy to follow step by step images.

Ingredients
- 125 g Tinned mackerel in sunflower oil (4oz can) Or 3 tablespoon sunflower oil + 1 mackerel fillet). (See Note 1)
- 1 red onion halved and finely sliced
- 1 tablespoon fresh ginger grated (*avoid lazy ginger)
- 1 clove garlic minced (optional)
- ½ teaspoon turmeric
- 1 teaspoon lemongrass paste
- ½ red pepper Sliced
- ½ yellow pepper sliced
- 2 chicken stockpot Or 3 chicken stock cubes
- 1 litre water
- ¼ teaspoon black pepper
- 1 tablespoon Light soy sauce
- 1 teaspoon chilli flakes Or ½ teaspoon for less heat
- 1 lime juice only
- 2 courgettes (zucchini) spiralized. (See Note 2)
- 400 ml Can of coconut milk *Approx under 2 cups
- 1 tablespoon sesame seed oil To drizzle (See Note 3)
- 2 spring onions sliced, to garnish
- Fresh coriander To garnish
Instructions
- Drain the sunflower oil from the tinned mackerel straight into a large saucepan, then add the onions, garlic and ginger and saute until softened.
- Stir in the turmeric, lemongrass paste, chilli flakes, black pepper, mackerel and peppers and fry for another minute until everything is coated.
- Stir in the water, stock pots, soy sauce and spiralized courgetti noodles (zucchini noodles), then bring to the boil.
- Simmer for 5 minutes.
- Stir in the coriander, lime juice, coconut milk and sesame seed oil before serving and topping with fresh spring onion slices!
