
This week, I've made a few last minute Christmas hamper gifts. However, these really should come with a warning because I've eaten a few before bagging them up!
They're like incredibly squidgy brownie bites but in fruitcake and it works so well with the chocolate! All you need is some Christmas cake or fruitcake, chocolate and some lollipop sticks or petit four cases (I prefer the latter - it's easier!)

Easy Chistmas Cake Pops & Petit Fours Gift
Ingredients
- 700 g Fruit cake or Christmas Cake
- Lollypop sticks or Petit Four cases
- 400 g chocolate or 200g milk and 200g white
- Betty Winters Christmas cake decorations
- Cake pop holder
Instructions
- Blitz the fruit cake in a food processor.
- Transfer to a freezer safe bowl, cover clingfilm and freeze for 30 minutes to 1 hour to firm up.
- Remove the fruit cake from the freezer and roll in to 2 pence size balls and place on a lined baking tray. The poke in some lollypop sticks. (SKIP the lollypop stick step is using petit fours instead).
- Now pop in the freezer for another 30 minutes.
- Then break up the chocolate and place in a microwaveable bowl and melt in short bursts.
- Remove the fruitcake from the freezer again and stir in to the melted chocolate. Angle it to remove excess and avoid drips. FOR PETIT FOURS: Pick up with cocktail sticks, dip them in to chocolate and place in the petit four cases instead.
- Then immediately decorate with edible cake decorations and place in the cake pop holder and place in the fridge to set.
