Instructions
Add the oil to a large saucepan and saute the onions and garlic until softened.
Add the salt and pepper, grated carrots, and paprika and stir while frying for 5 more minutes.
Add the remaining ingredients except the cheese, cream and honey, then bring to a simmer, then cover with a lid and continue simmering for 20 minutes.
Once the carrots have cooked, stir in the cheese, honey and cream and heat through before serving.
