This winter-warming grated carrot pumpkin soup tastes delicious with melted cheese and paprika and is SO easy to make with pumpkin puree.

We tucked into this delicious winter-warming cheesy pumpkin soup last week and shared leftovers with our narrowboat neighbors.
Speaking of which, when it comes to kitchen space on narrowboats, the clue is in the name! It's a small space, meaning every piece of cooking equipment needs to be carefully thought of.
Which is why - if you're in the same boat (sorry 😅), this is a fuss-free chunky soup that requires very little equipment. Just a couple of things to measure out food and a grater.

What can I use instead of carrots? You could alternatively use diced or grated sweet potato or parsnip for a chunky, sweet taste. Or, if more accessible, potato will work too, but you may want to add another teaspoon of runny honey.
Could I make this a Slimming World carrot pumpkin soup? Easily! I recommend replacing the double cream and cheese for fat-free natural yogurt and cheeses.
What if I can't find canned pumpkin puree? Although easier to use, I actually slow cook a whole pumpkin within the skin cooker, then scoop out the puree. Note however: some say not to use carving pumpkins as there's less flavour and they're more watery. I'm here to say you can with this recipe!

Cheesy Carrot Pumpkin Soup Recipe
Ingredients
- 1 tablespoon Rapeseed oil
- 2 cloves Garlic
- 1 Red onion diced
- 3 Carrots grated
- 3 cups Pumpkin puree (750g)
- 3 cups Chicken stock (700ml)
- 2 tablespoon Smoked paprika
- Pinch Salt
- Pinch Pepper
Stir in at the end
- 1 cup Double cream (200ml)
- 2 cup Mature cheddar Grated
- 1 teaspoon Runny honey
Instructions
- Add the oil to a large saucepan and saute the onions and garlic until softened.
- Add the salt and pepper, grated carrots, and paprika and stir while frying for 5 more minutes.
- Add the remaining ingredients except the cheese, cream and honey, then bring to a simmer, then cover with a lid and continue simmering for 20 minutes.
- Once the carrots have cooked, stir in the cheese, honey and cream and heat through before serving.
