First, preheat the oven to 180 c fan, 200c conventional, gas mark 6 or 400F. Meanwhile, remove the puff pastry from the fridge.
Fry the bacon in a large skillet, air fryer, or under the grill for 5 minutes on each side.
Next, cut the puff pastry sheet into six equal squares. Note: this is halfway from the shortest side and in thirds from the longest edge.
Spread the mustard in the centre of your puff pastry squares in a diagonal.
Sprinkle half the grated cheese in the centre. Then add a slice of bacon on each, followed by the remaining grated cheese.
Now brush the two outer corners with the beaten egg to help them stick when you fold them over.
Then fold the pastry from the two opposite sides, overlapping and prick, then press each one twice with a fork to prevent them from unraveling while baking.
Place them on a lined baking sheet and brush the top of the pastry with more beaten egg.
Bake in your preheated oven for 15-20 minutes until you have risen flaky pastry that's golden.
