Puff pastry dough - I recommend a sheet of puff pastry that comes in a roll from the supermarket. You can also use the parchment paper that it comes pre-lined with
Dijon Mustard - or English mustard to add some heat and compliments the cheese
Bacon rashers - I use unsmoked bacon, but feel free to use smoked, or streaky bacon. These can be grilled, or chopped into strips of bacon - whatever you fancy!
Mature or sharp cheddar cheese - this is grated or a slice of cheese to spread it a little further. Or you can use any good melty cheese like comte or gruyere, or your favorite flavoured smoked or chilli cheese, etc
Beaten egg - this is to use as an egg wash for a golden colour to the
📋 Instructions
First, preheat the oven to 180 c fan, 200c conventional, gas mark 6 or 400F. Meanwhile, remove the puff pastry from the fridge.

1. Fry the bacon in a large skillet, air fryer, or under the grill for 5 minutes on each side.

2. Next, cut the puff pastry sheet into six equal squares.
Note: this is halfway from the shortest side and in thirds from the longest edge.

3. Spread the mustard in the centre of your puff pastry squares in a diagonal.

4. Sprinkle half the grated cheese in the centre.
Then add a slice of bacon on each, followed by the remaining grated cheese.

5. Now brush the two outer corners with the beaten egg to help them stick when you fold them over.

6. Then fold the pastry from the two opposite sides, overlapping and prick, then press each one twice with a fork to prevent them from unraveling while baking.
Place them on a lined baking sheet and brush the top of the pastry with more beaten egg.
Bake in your preheated oven for 15-20 minutes until you have risen flaky pastry that's golden.

Depending on your dietary needs, here are a few simple swaps you can make to these easy bacon turnovers:
Puff pastry - use a vegan or gluten free puff pastry if needed. You could swap for shortcrust pastry, but you won't get a rise
Cheese - you can swap for grated mozzarella, parmesan, Emmental, any tasty cheese you wish, or even use vegan, or lactose free cheese if required
Bacon - this could be lean turkey bacon, sausage, ham, or chorizo, or use vegetarian or vegan bacon. Alternatively, you can use fried mushrooms, onions or roasted red peppers, etc
Dijon mustard - for a pinch of sweetness, you can swap for apricot jam, apple chutney, BBQ sauce, chilli jam, red pepper jelly, honey or maple syrup, etc. Or what about sweet chilli Christmas chutney for special occasions?
Egg - swap for milk as a glaze for the tops. To help the corner of the pastry stick to each other, you can use wet fingers instead

- Extra cheesy - mix the dijon mustard with an equal amount of cream cheese if you wish
- Deluxe - before baking in a hot oven, sprinkle the pastry with grated parmesan or a pinch of dried herbs or sesame seeds
- Spicy - use chilli cheese or other spicy cheese, or add a pinch of cayenne pepper or chili powder to the filling

Storing - we prefer eating these cheesy bacon turnovers after cooling them for 10 minutes out of the oven, but they can be stored in an airtight container and refrigerated for up to 3 days.
Freezing - cool to room temperature and again, store in a freezer-safe container for up to 3 months.
Reheating - If you want to eat the next day, defrost in the fridge if required and reheat in the oven or ar fryer for 5 minutes. You can microwave them for quickness, but they will be quite soft and soggy

- Don't overfill the puff pastry turnovers as you don't want gooey melted cheese leaking everywhere
- Seal the edges by brushing the border with egg wash before adding the top pieces of dough
- Brush the tops with egg wash before baking for a crispy golden colour
- Prevent using raw bacon with fat, otherwise it can be greasy and soggy - for a foolproof recipe, I use cooked bacon slices
- If no baking paper, grease your baking tray well to prevent them from sticking to the pan and burning on the bottom
