Here's how to make easy homemade oven chips, or in the air fryer with a time saving hack! I'll also show you how to make chunky chips, French fries, curly fries and air fryer chips, using not much oil for healthy eating.

Our whole family loves homemade baked chips with almost any meal. And we've found you really don't need to add extra oil to make them crispy.
For years, I've been making a healthy air fryer chips recipes, (which I'll also cover in this recipe). But I've got the best result using my shake and bake speedy hack to halve the time, using a silicone mat in the oven. And the best part? There's no turning them!
The problem with air fryers is, instead of working on a first batch, I chuck them all in, so they stick together because they're stacked on top of one another. But not with this recipe!

Potatoes - the type of potatoes we recommend are red potatoes (desiree), russet potatoes, King Edward or Maris Piper, but you can use any store-bought variety
Low calorie cooking oil spray - we use Frylight which uses a minimal amount of oil for unofficial syn free chips for weight loss. However, sometimes we use a tiny bit of olive oil or vegetable oil.
Seasoning - this is sea salt and black pepper for crispness and flavour,
Optional spices - you could use different seasonings such as paprika, garlic powder, cajun seasoning, etc
📋 Instructions
First, preheat your oven temperature to 220 c fan / 240 c conventional / gas mark 9 / 475 degrees F.

Cut the potatoes into thick batons using a chopping board and a sharp knife.
Or, as above, use a potato chipper on the thinnest setting.

Now place them in a colander and wash the excess starch away with cold water under a running cold tap.

Transfer to a microwaveable bowl and microwave for 5 minutes.
Then pour the excess moisture away and dab it with some kitchen paper.

Add the oil, a pinch of salt and pepper, and any spices you wish into a Tupperware container or sturdy food bag.

Firmly attach the lid and shake well until everything is coated and roughed up a little.

Spread your chips in a single layer on your lined baking sheet or a silicone mat and bake in the oven for 15 minutes until golden brown.
You may need to repeat with a second batch if doubling the recipe.
Tip: To save time, skip peeling the potatoes, which adds a lovely texture.
Also, if you prefer really crispy chips, then bake for a further 5 minutes.

👩🍳 Substitutions
Here are a few simple swaps you can do while making for homemade chips, depending on your dietary requirements:
- Oil spray - if not looking to make unofficial Slimming World chips, then you could use a little olive oil or rapeseed oil
- Potatoes - these can be swapped for sweet potatoes, or a mix of almond flour, xantham gum and water for Keto fries, or try celeriac chips
- Seasoning - for the perfect chip, you can use whatever seasoning you like, such as a simple homemade seasoned salt with black pepper, paprika, etc or Spicentice Chip Seasoning
⚖️ Variations
To make the most delicious chips, why not tweak them using some ideas below for the ultimate great recipe?
- Curly fries - using a Kitchen Aid food processor attachment
- Chunky chips - use a larger chip setting or cut larger batons
- Spicy chips - add ground cumin, smoked paprika, smoked paprika, or make your own American chip spice - this is especially tasty with sweet potato chips
- Cheesy chips - sprinkle on some parmesan, or nutritional yeast for a vegan diet
- Sliced potatoes - alternatively you could oven-bake scallion potatoes (like scalloped potatoes) with a mandolin slicer

❄️ Storage
Storing - we prefer eating homemade oven chips fresh out of the oven, but they can be stored in an airtight container refrigerated for up to 3 days.
Freezing - cool to room temperature and again, store in a freezer-safe container for up to 3 months.
Reheating - If you want to eat the next day, defrost in the fridge if required and oven-bake again until you have crispy baked chips again.

- By microwaving the homemade oven chips first, it draws out some moisture for a quicker cooking time. If skipped, then baking time should be longer at around 20-25 minutes
- To speed up cooking even further, rest the potatoes on layers of paper towels in a dry place
🍽️ Serving Suggestions
One of our favourite ways to eat our own chips is as a side dish to a main and with tomato ketchup or sour cream.
You might also like them with lean steak, dipped in baked camembert, or simply eat alongside Italian recipes like lasagne, pizza and more.
❓ FAQ
Air frying chips are probably the best way if you have little time, but you can still use my microwave hack for quicker results.
Once chipped, place them in the air fryer basket and spray well with Fry Light. Give them a good shake and bake for around 15-18 minutes at 180 degrees, shaking from time to time to avoid sticking.
Yes, cooking chips from scratch tend to be much healthier with Frylight than in a deep fat fryer. It's also perfect for low-fat diets like a Slimming World plan or Weight Watchers.

- ⅛ teaspoon black pepper optional
Instructions
- First, preheat your oven at 220 fan / 240 c conventional / (gas mark 9) / 475F and line a large baking tray with your silicone mat. Note, the mat prevents any chips sticking whatsoever and there's no need to turn them.
- Once you've chipped your potatoes, place them in a colander, and rinse under a cold tap and shake any excess moisture away.
- Transfer into a microwaveable bowl and microwave for 5 minutes.
- Place the chips in a Tupperware container along with lots of sprays of Fry Light and seasoning. Firmly attach the lid and shake until everything is coated and roughed up a little. Note: if you don't have one, you could do this in a sturdy food bag.
- Spread your chips on your baking tray and bake in the oven for 15 minutes. If you prefer even crispier, bake for a further 5 minutes and serve.

Just wanted to say my mind was blown by how quick and effective this was. I’ve been experimenting with homemade chips on and off for years and can’t believe I never came across the pre-microwaving hack. Saves an incredible amount of time (including the need to soak for any period) and as far as I could tell, doesn’t adversely affect the taste. I’ve never commented on a recipe in my life but a million hats off to you for this! I just made great chips in about 23 minutes. Genuinely life changing 😂
