This healthy roasted red pepper soup recipe is divine! It's suitable for keto diets because it's low carb and creamy with full fat cheese. And once roasted, I'll show you how to make it in a soup maker or stovetop
Preheat your oven at 210c fan / 230c conventional / Gas Mark 8 / 450F
Place the halved peppers, oil, salt, pepper and oregano in a lidded storage tub, close, then give it a good shake until everything is coated.
Next, spread everything on a baking tray with silicone mat (or baking paper) and roast in the oven for 40 minutes.
Once done, pour the oil from the tray into a large saucepan or a soup maker with saute function and saute the red onions.
Then add the remaining ingredients except the cheese and cream. Soup Maker: Add the water last if using a soup maker to see if you need to add more or less upto the 1600ml line.NOTE: It's fine to blend in the stock cubes in towards the end, in case you don't feel like you need the extra flavour.
Simmer for 20-22 minutes or set the soup maker to smooth.
Blend along with the cheese, then serve, drizzle with cream and garnish with fresh herbs of your choice.
