This healthy roasted red pepper soup recipe is absolutely divine! It's suitable for keto diets because it's low carb and creamy with full fat cheese. And once roasted, I'll show you how to make it in a soup maker or stovetop.

If you've never tried making your own homemade soup recipes before, then this healthy roasted red pepper soup is one of the ones I recommend first.
It'll quickly teach you the difference in flavour between a roasted red bell pepper soup and a mere sauteed one. And the same goes for low carb roast tomato soup, too.
Or, if you don't have enough red peppers, you might like to try a combination of roast tomato and pepper soup (unofficial Slimming World friendly).

How to Make Roasted Red Pepper Soup
Equipment I Use
First, let's talk about what equipment I used and any alternatives you may have at hand.
- Roasting tin
- Silicone baking mat

- Tupperware container or food bag

Soup Maker Red Pepper Soup
Note that a soup maker is not vital for roasted red peppers soup. But when making healthy soup recipes for a soup maker, or any for that matter.
The thing is, a soup maker has a limit of what you can put in it and usually makes between 1300-1600ml. Any more or less and it won't turn on. I tend to solely focus on making them in my machine as a priority, knowing that they cook this recipe red pepper pot soup, too.

Roasted Red Pepper Ingredients
- 6 red peppers halved and deseeded
- 2 tbsp olive oil
- ½ tsp fine sea salt
- ¼ tsp cracked black pepper
- 1 tbsp oregano
- 2 tbsp tomato puree
- 200 g cauliflower raw or frozen
- 600 ml water or 700ml (up to the 1600ml line of soup maker)
- 1 red onion diced
- 1 tbsp smoked paprika
- 60 g cream cheese
- 2 chicken stock cubes *optional and stir in last if you feel you need it
- 100 ml single cream
Alternative Ingredients
If you're not looking for a keto red pepper soup, you can:
- Swap the cauliflower for a potato, beans
- Add more fresh herbs instead of relying on stock cubes with additives
- If you can't make fresh roasted red peppers, then 6 red peppers are the equivalent of 3 x 16oz jars of roasted red peppers, with 2 peppers in each.

- Using cooking oil spray as opposed to olive oil to ensure it's low fat
- Choose a low fat cheese if you wish
- Stir in yogurt, quark or creme fraiche at the end
- Depending on the plan you're following, you could also swap cauliflower for a sweet potato red pepper soup or butternut and red pepper soup

How to Make Easy Red Pepper Soup
Roasting peppers may not sound like an easy way to make soup. But it's actually your oven that will be doing most for work.
But to make my my keto bell pepper soup, I:
- Preheat your oven at 210c fan / 230c conventional / Gas Mark 8 / 450F
- Place the halved peppers, oil, salt, pepper and oregano in a lidded storage tub, close, then give it a good shake until everything is coated.
- Next, spread everything on a baking tray with silicone mat (or baking paper) and roast in the oven for 40 minutes.
- Once done, pour the oil from the tray into a large saucepan or a soup maker with saute function and saute the red onions.
- Then add the remaining ingredients except the cheese and cream. Soup Maker: Add the water last if using a soup maker to see if you need to add more or less up to the 1600ml line.
- Simmer for 20-22 minutes or set the soup maker to smooth.
- Blend along with the cheese, then serve, drizzle with cream and garnish with fresh herbs of your choice.

Can I Make Roasted Red Pepper Soup Vegan?
To make a creamy vegan red pepper soup, simply:
- Use a vegan cheese to blend in at the end
- Ensure you stir in Vegan cream. Note, I used Elmlea plant based single cream
- Use a vegan stock if you opt for it, such as Marigold bouillon powder, (usually in a purple tub)
Storing Your Easy Red Pepper Soup
To store, I leave mine in an air tight container for keep in the fridge for up to 5 days. I find it easier to heat up in a lidded microwavable container or simmer on low on the hob to spatter prevent mess.
Can You Freeze Red Roasted Pepper Soup?
Yes, roasted red pepper soup is perfect for freezing! Again, my Sistema soup containers are also safe for freezing, which I tend to store for up to 3 months.
On the day of eating, I'll defrost fully in the fridge or use my microwave defrost setting. Then heat for 2 minutes, stir and heat for another 2.
It's also a delicious soup with oat flour cottage cheese scones. I butter them and dunk them in to eat.
