Healthy Sausage and Bean Casserole

Using Iceland Slimming World sausages, here's an easy syn free Slimming World sausage and bean casserole baked in the oven.

Equipment

Ingredients

  • Cooking oil spray
  • 6 Iceland Slimming World Syn Free Pork Sausages
  • 1 Red pepper diced
  • 1 Yellow pepper diced
  • 2 sticks Celery sliced
  • 2 teaspoon Smoked paprika
  • 2 cloves Garlic minced
  • 2 Bay leaves
  • 1 tablespoon Dried mixed herbs
  • 1 Chicken stock cube
  • 1 tablespoon Balsamic vinegar
  • 400 g Tinned chopped tomatoedsq (14oz can)
  • 400 g Tinned baked beans (14oz can)

Instructions

  • Preheat your oven to gas mark 4/180c fan/200c/350F
  • Place the Iceland frozen sausages (or other defrosted sausages) in to an oven proof casserole dish, spray with cooking oil spray and pop in the oven for 15 minutes.
  • Now add the remaining ingredients and cook on the hob until a simmering point and cover with a lid.
  • And finally, to cook the casserole, you can continue simmering away for an hour on the hob, or place back in the oven for 1 hour.
  • Serve with your favourite healthy side dish.
