First, preheat your oven to 180 c fan, 200c conventional, 400F or gas mark 4.Now bring a pan of water with a pinch of salt to a rolling boil.Then, toss in your macaroni and cook it until it's just al dente. You don't want mushy pasta.
Once your macaroni is cooked, drain it in a colander to remove the excess salted water.
In a large bowl, whisk together your milk, sugar, vanilla extract, and that single egg. We're building the foundation for our delicious pudding.
Now add your cinnamon or a bit of nutmeg and lemon zest to enhance the flavour and whisk once more.
Now, stir your cooked macaroni into the creamy mixture and make sure everything is well combined.
Pour the whole mixture into a greased ovenproof dish ensuring there are no pieces of macaroni stuck together.
Place your baking dish into your preheated oven and bake until it's beautifully golden on top and the edges of the dish are set.
