๐ Ingredient Notes
Please see the printable recipe card with exact ingredient quantities and preparation instructions at the bottom of this post.

Dried macaroni pasta - the firm texture of the macaroni is perfect as it won't disintegrate in the custard and cooked following the packet instructions
Milk - we use fresh milk, but you could use coconut milk, almond, oat milk, etc. Note, if you don't have scales, this is just over a pint of milk
Granulated sugar - this is just cheap table sugar, so no need for caster sugar. However, if you want better control over the sweet custard, you can omit it, but you won't achieve a good golden brown skin.
Vanilla extract - this enhances the flavour for a classic taste, or any flavouring you prefer, like salted caramel, etc
Eggs- this helps thicken the sauce. But you can omit if you prefer a creamy texture, although you may want to bake for longer
Cinnamon - we use sweet cinnamon, although it is traditionally made with a little nutmeg, but it isn't a household favourite.
Salt - to prevent the pasta from sticking together while boiling
Lemon zest - this is optional, but it really does create a bold, luxurious taste, so give it a try!
๐ Instructions
Here are my step-by-step instructions on how to make the best macaroni dessert!

1. Cooking the pasta:
First, preheat your oven to 180 c fan, 200c conventional, 400F or gas mark 4.
Now bring a pan of water with a pinch of salt to a rolling boil.
Then, toss in your macaroni and cook it until it's just al dente. You don't want mushy pasta.

2. Drain and set aside:
Once your macaroni is cooked, drain it in a colander to remove the excess salted water.

3. Now, let's mix up our creamy base:
In a large bowl, whisk together your milk, sugar, vanilla extract, and that single egg. We're building the foundation for our delicious pudding.

4. Time for spice and zest:
Now add your cinnamon or a bit of nutmeg and lemon zest to enhance the flavour and whisk once more.

5. Macaroni meets creamy goodness:
Now, stir your cooked macaroni into the creamy mixture and make sure everything is well combined.

6. Into the baking dish it goes!
Pour the whole mixture into a greased ovenproof dish ensuring there are no pieces of macaroni stuck together.

7. Bake until golden and set:
Place your baking dish into your preheated oven and bake until it's beautifully golden on top and the edges of the dish are set.

8. Cool, then serve and enjoy!
Let your pudding cool a little before serving.
Note, that the longer you leave it to cool, the more it will set.
Now add any extra toppings, like strawberry jam, chocolate sprinkles, etc and enjoy!
Tip: if you prefer a lighter, creamier texture, you can reduce the cooking time by 10-15 minutes, or omit the egg and switch the milk in the mixture for a vegan macaroni pudding!

๐ฉโ๐ณ Substitutions
Depending on your dietary needs, here are a few simple swaps you can make:
- Dairy-Free Options
Milk: Substitute with unsweetened almond milk, oat milk, or soy milk. Oat milk often provides the creamiest texture. - Gluten-Free:
Macaroni: Use gluten-free macaroni or another small gluten-free pasta shape. There are many great options available these days - Egg-Free: A common substitute for the binding properties of an egg in sweet baking is a "flax egg". To make a flax egg, mix 1 tablespoon of ground flaxseed with 3 tablespoons of warm water and let it sit for 5 minutes to thicken. Alternatives, you could try 1 tablespoon of chia seeds, or omit it for a creamy texture
- Sugar Alternatives: Substitute with an equal amount of granulated stevia for a lower-calorie option. Or, you could use coconut sugar, honey or maple syrup

โ๏ธ Variations
Let's make this macaroni pudding truly your own! I love a classic, but a little personalization makes it even better, right? Here are some ways to add your own special touch to this recipe:
- Spiced - Swap the nutmeg or cinnamon for a pinch of cardamom or a dash of allspice. Or, if you're feeling festive, a little pumpkin spice mix can add a cozy, autumnal vibe. Let your spice rack inspire you!
- Citrus - While we love the lemon zest, why not experiment? Orange zest adds a sweeter citrus note, or lime zest brings a zesty zing. You can even add a tablespoon of lemon juice to the mixture, if you love citrus flavours
- Fruity - Imagine plump raisins or currants nestled within the creamy pudding. Or, for a seasonal twist, add fresh berries before baking. Raspberries or blueberries would be delicious! Dried apricots, chopped small, would also be a lovely addition
- Nutty - A sprinkle of toasted almonds or walnuts on top before baking adds a delightful crunch and nutty flavour. Or, you could add chopped pecans into the mix
- Sweeter - If you prefer a deeper, caramel-like sweetness, swap the white sugar for brown sugar. Or, for a touch of honeyed sweetness, drizzle some honey over the top before baking
- Chocolate - For an indulgent treat, stir in dark chocolate chips or chunks before baking. Or, drizzle melted chocolate over the cooled pudding
- Crunchy - Sprinkle buttered breadcrumbs over the top before baking for a golden, crunchy topping.
The beauty of this recipe is its versatility. Don't be afraid to experiment and create a macaroni pudding that's uniquely yours. After all, cooking should be fun and personal!

โ๏ธ Storage
Storing - we prefer eating this recipe fresh, but it can be stored while covered with cling film and refrigerated for up to 3 days.
Freezing - cool to room temperature and again, store in a freezer-safe container for up to 3 months.
Reheating - If you want to eat the next day, defrost in the fridge if required and microwave until piping hot, or on the hob or stove.
๐กPro Tips
- Al Dente Pasta is Key: Don't overcook your macaroni. It should be al dente, meaning it still has a slight bite. Overcooked pasta will become mushy in the pudding.
- Salt Your Pasta Water Generously: This is crucial for seasoning the pasta itself, which will enhance the overall flavour of the pudding. The pasta should be seasoned before it goes into the pudding.
- Whisk Thoroughly: Ensure your milk, cream, egg, and sugar are whisked together until smooth and well-combined. This will create a creamy, even custard.
- Grate Zest Finely: Use a micro plane or fine grater to zest your lemon. This will release the essential oils without adding any bitter white pith.
- Evenly Distribute the Pasta: When adding the cooked macaroni to the custard mixture, make sure it's evenly distributed. This will ensure every bite has the perfect pasta-to-custard ratio.
- Use a Preheated Oven: A preheated oven ensures even baking and prevents the pudding from becoming soggy.
- Don't Overbake: Bake the pudding until it's set and golden brown on top, but don't overbake it. An overbaked pudding can become dry and tough.
- Let It Rest: Allow the pudding to cool slightly before serving. This will allow the custard to set further and the flavours to meld.
- Baking Dish Choice: A shallow baking dish will allow for more of the top to brown, and therefore more of the top to have a slightly crispier texture.
- Use quality ingredients: Using good quality milk, cream and eggs will greatly enhance the final product.
๐ฝ๏ธ Serving Suggestions
- Ice cream: Serve it warm, straight from the oven, for the ultimate comfort food experience. A dollop of whipped cream or a scoop of vanilla ice cream on top adds a touch of indulgence.
- Fruit: Serve alongside fresh berries, such as raspberries or blueberries, for a burst of freshness and a touch of acidity. A compote of stewed apples or pears would also complement the warm, creamy pudding beautifully
- Nuts: Sprinkle toasted chopped nuts, like almonds or walnuts, over the top for added texture and a nutty flavour
- Sweet Sauces: Drizzle with a caramel sauce or a warm vanilla sauce for an extra layer of sweetness. A light drizzle of honey, or maple syrup can also work well
- Tea Time Treat: Serve small portions of the pudding alongside a pot of tea for a delightful afternoon treat
- Elegant Dessert: Present individual milk puddings in ramekins or small glass bowls for an elegant dessert presentation
โ FAQ
I would only recommend a firmer pasta like macaroni or orzo to prevent regular pasta from turning mushy. However, you could try adding regular uncooked pasta, but you would need to stir form time to time.
Yes, you can prepare the pudding ahead of time and bake it when you're ready. Store the unbaked pudding in the refrigerator for up to 24 hours.
The pudding is done when it's golden brown on top and set in the centre. A toothpick inserted into the centre should come out clean.
While you can freeze it, the texture may change slightly. It's best enjoyed fresh. If you do freeze it, allow it to thaw completely in the refrigerator before reheating.
Yes, you can reduce the sugar to your preference. However, keep in mind that sugar contributes to the texture and sweetness of the pudding.
Yes, you can, but the pudding will be less creamy. Full-fat milk and cream provide the richest flavour and texture.
This could be due to undertaking, using too much liquid or not enough eggs. Make sure to bake the pudding until it's set and follow the recipe's liquid measurements.
If your oven tends to brown the top quickly, you can cover the baking dish with foil during the last 15 minutes of baking.
Yes! Raisins, berries, craisins or other chopped dried fruits make great additions.
Salt enhances the flavours of all the ingredients, even in sweet dishes. It helps to balance the sweetness and brings out the other flavours in the pudding.
