This is the ULTIMATE Christmas rocky road recipe! With an orange chocolate base, citrus and spices from fruity mincemeat and is PACKED with broken biscuits, marshmallows, and nuts. Then topped with a white Christmas rocky road touch and broken ginger creams. Each bite is HEAVEN!
450gChocolate Orange(15.5oz (4 x 110g Galaxy Chocolate Orange Bars))
125gButter (½ cup)
120gHoney roasted peanuts(1 cup)
190gshortbread biscuits Broken fits into 1 & ½ cups or 6.7oz)
114gCadbury's Chocolate Orange Fingers(22 fingers - broken into 0.5-1" pieces or 4oz of another biscuit)
80gGolden syrup(4 tbsp)
65gMini marshmallows(1 cup)
80gMincemeat (mince pie filling)(4 tbsp)
Topping
180gWhite chocolate(Around 6oz bar)
150gGinger Creams (Biscuit/cookie sandwiches or similar)10 biscuits (5oz) broken or try Ginger Nuts
Instructions
Base Layer
Butter and line a brownie baking tin with baking paper
Break or chop all of the biscuits into small bite chunks, no larger than 1" so that the melted chocolate can coat everything easily
Now add the marshmallows, nuts, and mincemeat and set aside
In a heavy glass mixing bowl, add the orange chocolate, syrup, and butter
Now gently stir and melt the chocolate ingredients while sat on top of a simmering saucepan with about 1" of water - make sure it doesn't touch the bowl* Or in short 20-second bursts in a microwave, but don't overheat. See Note 1
Now mix in the bowl of biscuits etc and stir until everything is coated
Transfer to the baking tin and press down well until everything is compacted
Top Layer
Break up all the ginger creams or gingerbread biscuits into chunks and set aside
Now melt the white chocolate - this can be done in a microwaveable bowl, then spread on top of the rocky road base
Immediately place the biscuits on top, pressing them down so they can set while the chocolate cools
Now place the rocky road in the fridge for at least 3 hours or until it has set
Cut it into 16 or 32 squares and enjoy with a cuppa!

Note 1:
What if my chocolate split? If you've overheated your chocolate (which can happen easily in the microwave), you might notice splitting where the fats and solids have separated. You could try adding some grated chocolate to try bringing it back together.
