I love rocky road! When I worked in Harrogate, a cafe on John Street used to serve the BEST rocky road recipe EVER. It was my favourite lunchtime treat that I'd wash down with a coffee. It had chocolate, biscuits, raisins, and marshmallows. YUM!
It was a dark chocolate rocky road but it had almost a cakey crumb that I've never been able to replicate. I tried Nigella's Christmas Rocky Road too (which is also divine), but again, wasn't quite the same. When I introduced my husband to it, I was surprised he didn't like the rich chocolate as much as I did.
He prefers Cadbury's or Galaxy milk chocolate. So when he asked if I could make a treat to take to work, I kept that in mind and had some fun with festive flavours. Everyone at his work LOVED it, and I'm hoping this is the kind of recipe that will also give you a lasting memory too.

Alternative Equipment
*US/Metric: Kitchen scales or not, I've also provided measurements for cups, and spoons for my US friends, so you don't need all of the equipment above.
*Chopping board and knife: You'll need to break a lot of chocolate up, but if you're fine with snapping into cubes with your hands, then you can skip the chopping board. This is the kind of gingerbread rocky road that will need a knife to cut though!
*Saucepan and glass mixing bowl: I recommend using a saucepan with about an inch of water in the bottom so you can melt the chocolate, butter and syrup together in the pan above. You will have more control to gently melt it. However, you can microwave in short 20-second bursts, but if you overheat it, the chocolate and fats can split. This will leave an undesirable white fat marbling effect in your Xmas rocky road recipe.
*Square brownie tin: This is quite a deep festive rocky road. But if you want to get more servings, you can use a Wilton 11 x 7" brownie tin, but I recommend doubling the white chocolate and ginger biscuits!

Jump to Recipe- Orange chocolate - I used Galaxy chocolate orange for the base, but if you want a more intense dark chocolate, then try a mix of 250g dark chocolate and 200g milk chocolate. You could use Terry's chocolate orange, or mix the zest of 1 orange into plain chocolate and 1 teaspoon pr orange extract/oil.
- Broken biscuits - I used a mix of shortbread biscuits for a millionaire rocky road taste and Cadbury's orange chocolate fingers. It really doesn't matter what you use - you could give it a Malteser rocky road twist, or Biscoff biscuits.
- Mini marshmallows - they add a beautiful pink and white contrast and we love their light spongy texture here and there. But if using large marshmallows, you'll need to cut them up.
- Golden syrup - this gives the chocolate a sweeter taste. It's not completely vital, but I'd recommend it if you're mixing it with dark chocolate
- Butter - this isn't vital and some don't use it at all, but it helps thin the chocolate out and spread it further while coating the rest of the ingredients! *Some stir hot double cream in instead for more of a ganache.
- Mincemeat - this is the secret ingredient for a mince pie rocky road taste which takes this fruit and nut chocolate rocket road to another level! If you can't buy ready-made mincemeat, then why not try this slow cooker mincemeat recipe or swap it for dried mixed fruit.
- Honey roast peanuts - if you're making for someone with a nut allergy, then you can swap this for more broken biscuits. I used sugar peanuts as they're affordable, or you could use chopped walnuts, pecans or other mixed nuts.
Optional Chocolate Snow Top:
- White chocolate - this step is optional, but I love the contrast white Christmas contrast and it hides a bumpy top. Or you could add a dusting of icing sugar.
- Ginger creams (cookie sandwich biscuits) - ginger is a very warming spice this time of year, which is broken up and placed on top of the white chocolate before it sets. But you could use any broken biscuits like Ginger Nuts, Gingerbread, Wagon Wheels, Oreos, broken Crunchie bars, etc. Or even Christmas candy decorations.

📋Instructions
Here's my step-by-step on how to make rocky road slices that tastes like Christmas!
- Butter and line a brownie baking tin with baking paper
- Break or chop all of the biscuits into small bite chunks, no larger than 1" so that the melted chocolate can coat everything easily
- Now add the marshmallows, nuts, and mincemeat and set aside
- In a heavy glass mixing bowl, add the orange chocolate, syrup, and butter
- Now gently stir and melt the chocolate ingredients while sat on top of a simmering saucepan with about 1" of water - make sure it doesn't touch the bowl* Or in short 20-second bursts in a microwave, but don't overheat. See FAQ below.
- Now mix in the bowl of biscuits etc and stir until everything is coated
- Transfer to the baking tin and press down well until everything is compacted
White Rocky Road Top
- Break up all the ginger creams or gingerbread biscuits into chunks and set aside
- Now melt the white chocolate - this can be done in a microwaveable bowl, then spread on top of the rocky road base
- Immediately place the biscuits on top, pressing them down so they can set while the chocolate cools
- Now place the rocky road in the fridge for at least 3 hours or until it has set
- Cut it into 16 or 32 cookies and cream rocky road squares and enjoy with a cuppa!

💡Tips
Storing
To help keep it fresh, store it in an air-tight container to prevent the biscuits from turning soggy.
If you live in a hot country or the temperature is around 86°F-90°F or 30°C, I recommend you store it in the fridge as well so that the chocolate doesn't melt.
You can keep it in the fridge for up to 2-3 weeks or at room temperature (providing it's not too hot) for up to 1 week.
Can Rocky Road be Frozen?
Yes! Just tightly wrap each square in clingfilm/food wrap, and tin foil and store in the freezer for 1 month.
To defrost, place in the fridge or on the worktop overnight. I recommend removing all of the baking foil about 1 hour before eating to avoid soggy biscuits.

Who invented Rocky Road? One of the earliest mentions of rocky road was in Australia in 1853. Apparently, it was a method for hiding and selling confectionary that spoiled on long trips from Europe. Nuts and other chocolates were then added to hide unwanted flavours.
What can I add to rocky road? You can also add glaced cherries, dried prunes, apricots, chocolate bars like Crunchie, Turkish Delight, etc. Or even leftover Celebrations chocolates that no one wants - although hard toffees are better melted in the chocolate itself. And what about mini eggs, candy cane rocky road or using sweets like gummy bears?
Is rocky road gluten-free? It easily can be, but you need to use gluten-free biscuits and ensure the chocolate you use is pure with no gluten-based added ingredients. The same goes for Vegan
Are rocky road vegan? Similar to above, ensure you use dairy-free chocolate and butter spread. Also look for:
- vegan golden syrup
- marshmallows without gelatin
- mince meat - note I've found most ready-made mincemeat uses vegan suet!

Equipment

Base Layer
- 450 g Chocolate Orange (15.5oz (4 x 110g Galaxy Chocolate Orange Bars))
- 125 g Butter (½ cup)
- 120 g Honey roasted peanuts (1 cup)
