What I love about these easy chocolate brownies with walnuts and raisins is that you don't require a larger whole jar of Nutella.
I originally developed this easy brownie recipe during lockdown when only 200g jars were available in shops and many foods appeared scarce.
So I had fun creating Nutella brownies with fewer calories while using up oddments from the pantry, such as raisins, walnuts, and almond flakes. They're now a family favorite dessert!

Nutella chocolate hazelnut spread - for a delicious Nutella flavor. Its consistency means there's no need to use additional melted butter, brown sugar, chocolate, or cocoa powder
Plain flour (all purpose flour) - this is flour without any rising agents, like baking powder, for an even consistency
Eggs - these are small or medium for fudgy brownies with a crinkly top. Or use large eggs for a chewy brownie with moist crumbs
Sea salt - I add a small pinch to enhance the hazelnut goodness
Optional Brownie Ingredients
Raisins - we like to add dried fruit to this basic brownie recipe, such as golden raisins, sultanas, chopped apricots, cherries, etc
Walnuts pieces - or whole walnuts chopped
Almond slices - or almond flakes

📋 Instructions
Here are my step-by-step instructions on how to make easy chocolate brownies with Nutella:

1. First, preheat the oven to 170c fan, 190c conventional, gas mark 5 or 375 F, and line a brownie pan with parchment paper.
Then mix the wet ingredients together (Nutella spread and eggs) in a mixing bowl or food mixer until smooth.

2. Next, slowly whisk or stir in the dry ingredients (the flour), a little bit at a time by hand to prevent lumps.
Repeat until you have used up all of the flour mixture.
Don't forget to scrape the sides of the bowl.

3. Fold in the walnuts and raisins.

4. Pour into the prepared pan and level with a spatula.
Then sprinkle the top of the brownie batter with almond slices.
Then bake in a preheated oven for 20-25 minutes.
Tip: If you prefer gooey brownies, add some sweet chocolate chips to the batter

Depending on your dietary needs, here are a few simple swaps you can make to these chocolate and walnut brownies with raisins:
- Nutella - to make unofficial Slimming World chocolate brownies, you can swap for low calorie chocolate spread such as Sweet Freedom Choc Pot chocolate spread and omit fruit and nut. These work out at 57 calories each
- Plain flour - you can swap for gluten free flour if needed, almond flour for lower carb, self raising flour if you want some rise to your brownies to rise, you can use
- Walnuts - swap for pecans, peanuts, mixed nuts or make chopped macadamia nut brownies. Or swap for more raisins, or chocolate chips, etc
- Raisins - swap for other dried fruits such as sultanas, apricots, cherries, dates, dried mixed peel
- Almonds - swap for desiccated coconut, icing sugar drizzle after baking, etc
- Eggs - for eggless Nutella brownies, try swapping for 2 to 3 ripe mashed bananas. Then mix in a bowl of a stand mixer until smooth and level in a lined baking dish

Here are some different ways you can enhance and truly personalise this fruit and nut chocolate brownie recipe for now or next time:
- Plain - You can make his classic brownie recipe with just the 3 key ingredients instead of making fruit and nut brownies
- Fudgy Nutella brownies - stir in some bittersweet chocolate chips to the Nutella brownie batter. To save money, I often chop up my own from a chocolate bar
- Deluxe - for the best Nutella brownie recipe, we also like to add ½ teaspoon of vanilla extract and swap 1 tablespoon of flour for cocoa powder
- Espresso brownies - stir in espresso powder or strong coffee powder for the best nutella brownies as we do in this coffee brownie recipe to intensify the flavour
- Brownie sandwich - add a top layer of Nutella spread after baking, or make 2 batches of these from-scratch brownies and sandwich them together with a thick layer of Nutella in between
- Chewy Nutella brownies - for extra chewiness, press a melted mix of Nutella, butter, Rice Krispies, and marshmallows and press on top after baking as a top layer
- Crunchy brownies - stir in some granola to the batter
- Chocolate and peanut butter brownies - stir in a few dollops of peanut butter to the Nutella cake mix
- Nutella cupcakes - swap the flour for self rising flour and line a muffin tin with paper cases and bake for 20 minutes until a skewer comes out clean

*Instead of a square pan, you can make a brownie bundt cake, but an important step is to grease well and dust inside the tin with cocoa powder to prevent it from sticking - white flour will show after baking!

Storing - we prefer eating this simple Nutella brownies recipe once cooled on a baking rack, but it can be stored in an airtight container, or covered with plastic wrap and refrigerated for up to 3 days.
Freezing - cool your homemade brownies to room temperature and again, store them in a freezer-safe container for up to 3 months.
Reheating - If you want your quick Nutella brownies the next day, defrost them in the fridge if required and microwave until piping hot, or on the hob or stove

❓ FAQ
For fudgy brownies, stir in some chocolate chips to the batter. As the brownies bake, the melted chocolate into the crumbs for a delicious thick dense texture .
In a bowl, serve some scoops of vanilla ice cream and serve with diced Nutella brownies and drizzle some warm Nutella spread on top.
Your brownies may have turned cakey as the fat ratio wasn't as high. We find this when using larger eggs, or baking for too long. I recommend small to medium eggs as opposed to large.

This was fab! Such a quick and simple recipe. Because I have this annoying habit of adding anything and everything in my cupboard, I actually used chia seeds and coconut milk in place of eggs. I also put loads of raisins and chopped almonds in with some allspice and cardamom.
