We recently discovered the beautiful combination of chocolate brownies with the addition of coffee. If you've never tried it before, make sure you put it on your to-do list!
Strong coffee really makes a world of difference to any original recipe when it comes to chocolate cake.
And with a part gooey and fudgy centre from the added chocolate chips and a chewy, baked top, these are officially the best chocolate brownies I have ever eaten. They're delicious partially warm on their own, cold, or with a scoop of ice cream.

🛒 Ingredient Notes

Cooking spray - this is to spray the baking pan for the baking paper to stick to when lining. Or spread butter with a paper towel
Dark chocolate - for a rich chocolate flavor. Half is for melting to flavour the base of the baked brownies; the other half is for gooey chocolate chunks. I recommend using good quality chocolate with high cocoa content as you won't get much depth of flavour with milk chocolate
Unsalted butter - for its rich and moist texture. If using salted, omit the salt as an extra ingredient. This is melted over medium heat in a saucepan.
White sugar - this is granulated sugar as it will be partially melted in the melted butter. Or you could use powdered sugar (caster), although it isn't necessary for the extra cost
Soft light brown sugar - for a smoother, sweet, mellow taste, or you can replace with demerara sugar, or more white sugar if not accessible
Eggs - for your homemade brownies to bind and ever so slightly rise
All purpose flour (plain flour) - with no leavening or baking powder as we don't want them to rise much
Vanilla extract - this is to enhance the flavour of the chocolate to take them to another level
Unsweetened cocoa powder - I use Cadbury's Bourneville for a more chocolatey brownie mix
Instant coffee granules - or any with an intense coffee flavour mixed with 2 tablespoon of boiling water. However, if you have instant espresso powder, you can add it straight into the chocolate brownie batter, which will also decrease the cook time
Salt - to enhance the overall flavours
📋 Instructions
First, pre heat oven to gas mark 4, 160 c fan, 180c, 350F.

1. In a microwave-safe bowl, break up half of the chocolate.
Then microwave in short 15 second bursts, stirring inbetween until fully melted.
In a 2nd bowl, mix the bitter coffee and boiling water until dissolved.
Now set both aside.

2. In a large bowl, add the sugars and melted butter.
Then stir well with a spatula.

3. Now add the melted chocolate.

4. Stir until completely combined.

5. Now add the eggs, vanilla extract and coffee, then mix well.

6. Add the dry ingredients: the flour, cocoa powder and salt.
Then gently fold in until the batter is smooth.

7. Fold in the other half of the chocolate, which is the chocolate chips you set aside earlier.

8. Pour the batter into the prepared pan and smooth with a spatula and bake in a preheated oven for 40-45 minutes.
After the full 40 minutes, check to see if the top wobbles. If it does, bake it for a further 5 minutes to prevent it from sinking, and repeat the test until you have a crackly top.

🍫How can I tell these fudgy brownies are done?
Once the top is firm, test it in a lots of different places by inserting with a toothpick.
Gooey - If it comes out with lots of cake batter smeared on it, it will have a gooey center when set.
Fudgy - If you would prefer less batter on the stick, continue to bake for fudge brownies. And of course, continue baking in 10 minute increments if you prefer cakey brownies
Cakey - Note, as this is a gooey brownie recipe, it's likely you'll hit melted chocolate, but if you want will continue to cook and set while cooling

👩🍳 Substitutions
Depending on your dietary needs, here are a few simple swaps you can make to this coffee brownies recipe:
- Dark chocolate - swap half the chocolate (which is for chocolate chips) for white chocolate buttons. Or if you are on a budget, you can omit the chocolate and double the amount of cocoa powder. Although note, these will no longer be gooey chocolate brownies
- Instant coffee - this can be any strong coffee, or leftover brewed coffee, like espresso. Alternatively, you can find camp coffee essence from the baking aisle in grocery stores
- Butter - For a cheaper alternative, you could use baker's block such as stork, etc. Or replace the same quantity with vegetable oil, coconut oil or unsweetened applesauce
- Sugar - instead of using a mix of light brown sugar with white granulated sugar, you could make up with more white if more accessible. or swap for maple syrup, honey, or sweetener for low sugar brownies

⚖️ Variations
Here are a few different ways you can make an even more decadent brownie recipe:
- Coffee frosting - mix a coffee buttercream icing to spread on top
- Leftover chocolates - if you have Quality Street chocolate box chocolates that nobody likes, these are perfect for hiding into the mixture
- Biscuits - place biscuits such as Bourbon biscuits, custard creams, etc on top of the brownie before baking
- Fruit - add dried fruits such as chopped cherries, apricots or cranberries for extra fruity sweetness and a chewy texture
- Nuts - you can add a nutty flavour and crunch by folding in some chopped walnuts, pecans, crushed pistachios, or even sesame seeds
- Chocolate orange - use dark chocolate orange along with orange zest for an exotic twist
- Turkish coffee chocolate brownies - add crushed cardamom seeds to the mix for a delicious infusion
- Salted caramel - after pouring batter into your prepared tin, why not add some salted caramel swirls, or even dollops of peanut butter
- Kid friendly - omit the coffee flavouring altogether if you think it will be too much as use this as a base recipe.

Storing - we prefer eating these coffee brownies after cooling for 1 hour, or when completely cold. However, they can be stored in an airtight container at room temperature or in the fridge for up to 5 days.
Freezing - cool to room temperature and separate each brownie layer with aluminum foil or plastic wrap. Then store in a freezer-safe container for up to 3 months.
Reheating - If you want to eat the next day warm, first, defrost in the fridge if required. Then place back in a brownie pan and heat for 10 minutes at the same baking temperature. They will heat well in an air fryer.

🍽️ Serving Suggestions
Ice cream - serve warmed up with a scoop of vanilla ice cream and fresh mint as part of an ice cream sundae, or with a drizzle of fudge sauce. Or serve between two brownie squares for a brownie ice cream sandwich.
Cream - enjoy with some single cream or freshly whipped cream or from a can with a side of fresh berries, such as cherries for a sumptuous twist
Tea or coffee - another thing I love to wash the sugar down, is with a hot drink, like tea or coffee. Alternatively, you might liketo enjoy it with a refreshing mocha frappucino iced coffee.
❓ FAQ
I would not recommend ground espresso in this recipe as it would be very grainy and different texture. I only recommend an instant powder or essence for an intense coffee flavor so that it fully dissolves in the chocolate mixture.
Of course! Just follow the manufacturer's instructions and stir in 3 tablespoon of instant espresso powder. And if it could be stronger, add another tablespoon the next time you bake them,

Easy Espresso Coffee Chocolate Brownie Recipe {Fudgy}
Equipment
- 20cm square baking tin (8x8" brownie tin)
Ingredients
- 300 g Dark chocolate (10.5oz)
- 193 g Unsalted butter Melted (⅔ cup + 2 tbsp)
- 200 g Granulated sugar (1 cup)
- 100 g Soft brown sugar (1 cup packed)
- 3 large Eggs
- ¾ teaspoon Vanilla extract
- 120 g Plain flour (1 cup All Purpose flour)
- 50 g Cocoa powder unsweetened (½ cup)
- 3 tablespoon Instant espresso coffee
- 2 tablespoon Boiling water
- ⅓ teaspoon Salt
Instructions
- Chop up all of the chocolate and set half aside for later, then the other half in a microwave-safe bowl and microwave in short 15 second bursts, stirring in between until fully melted.
- In a cup, mix the bitter coffee with 2 tablespoon of boiling water until dissolved and set aside.
- In a large bowl, add the sugars and melted butter.Then stir well with a spatula.
- Now add the melted chocolate and stir until combined.
- Now add the eggs, vanilla extract and coffee, then mix well.
- Gently stir in the flour, cocoa powder and salt until the batter is smooth.
- Fold in the other half of the chocolate, which is the chocolate chips you set aside earlier.
- Pour the batter into the prepared pan and smooth with a spatula and bake in a preheated oven for 40-45 minutes.After the full 40 minutes, check to see if the top wobbles. If it does, bake it for a further 5 minutes to prevent it from sinking, and repeat the test until you have a crackly top.
- Once baked, remove from the oven and allow to cool in the pan for 10 minutes. Then transfer to a wire rack until cooled, then slice into 16 squares.
