After experimenting with baking ratios, I give you what I consider the best strawberry blondies recipe with milk chocolate chips. They're so delicious with a slight bite and not too dense or fluffy. And they're only 99 calories each!

Over the last few months, the fight for finding a bag of flour is finally easing. I'm sure I'm like many, where I've been disappointed to find my online order arrived with substitutes of the unknown.
Gluten Free flour for example. I've tried developing a few recipes with it with varied results. In fact, I'm next to try Gluten Free blondies with this recipe, which I'm sure for this inparticular, will be fine.
But I'm now inundated with cake flour. Apparently, it has lower protein content and is finer than its sister, plain flour. And this is what I've been playing with lately to make this strawberry blondies recipe. Which, by the way, was such a sucess, I managed 3 before they all disappeared before me.

What Are Blondies?
Now I find this question extremely fascinating. While I've been on my experimental search for the perfect blondies recipe, the texture and consistency varies from country to country online.
But I can tell you what I think a blondie recipe should be like. I see it as a brownie counterpart, except it's white and not majority dark chocolate. So I think you're better asking yourself, how do you like your brownies?
Do you like them light and fluffy with a fine cake crumb? If so, then you may want to try equal ratios like my Raspberry Chocolate Traybake with Almonds. But me? I prefer a brownie with a bit of weight to it where it doesn't fall apart in my hands. And that's what I have for you here.

Tips on How to Make Blondies With Chocolate Chips and Strawberries
These blondies can be made various ways. But I'll talk you through my little tips or work arounds.
- I mix the sliced strawberries with 1 teaspoon of caster sugar first before placing on top so they're not tart
- Placing the strawberries on top of the mixture means they won't fully sink to the bottom during baking
- If not, you could mix the strawberries with a tablespoon of flour before folding into the mixture to prevent sinking entirely (if you want to mix it in that is)
- Remember, these blondies will firm as they cool. After 35 minutes in the oven, I press the top to see if it has a paper-thin crust as my Easy Nutella Brownies do. Then take them out to harden
- Your oven may be running hotter than mine. So you may find you need an oven thermometer to get the perfect blondie out of this recipe.
