This seriously rich Christmas chocolate fridge cake recipe is so easy and delicious and perfect for using festive leftovers such as dried nuts, seeds, broken biscuits, and liqueur in the cupboard.

Fun Fact! Did you know the Queen's favourite cake was a broken biscuit cake with chocolate? That's why it's often called a Queen chocolate biscuit cake recipe.
Well, most of us are facing tough times sourcing ingredients at the moment while in lockdown. I, for one, am avoiding as many supermarket shopping trips by simply using up old food I have lying in the cupboard.
And that's how this seriously rich chocolate fridge cake came about. Also known as a broken biscuit cake! I raided the baking cupboard using old Christmas cake ingredients. Even some dark chocolate with sesame seeds and orange.
You can tell I've had them for a long time as most of the chocolate had gone marbly and discoloured. So instead of throwing it away, I turned it all into something completely divine.

How to Make Chocolate Fridge Cake
Making this Christmas chocolate fridge cake is extremely simple! You can find the printable recipe towards the bottom of this page, but here's the easy steps.
- Line a 20cm square baking dish or tray with baking paper
- Melt butter, chocolate, syrup and sweet liqueur together in a large glass bowl of gently simmering water in a pan
- Meanwhile, weigh out all the dry ingredients and break half the biscuits into bite-size pieces, the other half into fine crumbs*
- Once the chocolate is completely melted, add the dry ingredients and mix until everything is coated
- Transfer to the baking dish and press down firmly and smooth over
- Cover and set in the fridge overnight or 6 hours minimum
- Cut into 16 or more squares and enjoy!
If you want more like a squidgy brownie at room temperature, then only break all the biscuits by hand into chunks.

What Can I Add to My Chocolate Fridge Cake?
I've made many chocolate fridges in the past, but mostly as gifts or an occasional treat. They're incredibly versatile, so why not look in your cupboards first to see what dry ingredients you could use?
However, if you're stuck, here are a few suggestions you could work with:
- Marshmallows (mini or chopped)
- Broken meringues
- Apricots
- Cherries
- Dates
- Pumpkin seeds
- Sunflower seeds
- Pistachios
- Pecans
- Walnuts
- Hazelnuts
- Brazil nut
- Maltesers or similar
- Digestive biscuits
- Amaretti biscuits
- Graham crackers
- Cornflakes
- Rice Krispies
- Banana chips
- Part peanut butter in place of some butter
- Baileys liqueur

How Can I Make a Healthier Chocolate Fridge Cake?
By no means is this chocolate fridge cake thought as healthy at 292 calories per square. But I think a little bit of what you fancy here and there leads to a happier, balanced lifestyle.
However, there are a few things you could do to make it healthier. These are:
- Use a large baking dish to thin out the squares
- Set in a loaf tin and thin slivers instead
- Cut into 32 squares instead of 16
- Spoon out into mini petit four cupcake cases
- Opt for reduced-fat biscuits
- Try sugar-free marshmallows
- Swap golden syrup for agave syrup
- Melt diabetic chocolate

What If I Don't Have Amaretto Liqueur?
It's absolutely not vital to use Amaretto which to me, smells like marzipan or battenberg cake. It just makes it an extra special chocolate fridge cake, ideal for seasonal times.
If you don't have, then why not try rum, whisky, brandy or any sweet liqueur. You could even use red wine.
How Can I Make a Firmer Chocolate Fridge Cake?
During warmer months, you may want to make a more firm chocolate fridge cake. To do this, you can completely crush some biscuit to crumb and stir it in. And ensure you're using pure butter, not a spreadable one or margarine.

How to Store Your Chocolate Fridge Cake
This chocolate recipe is better stored in the fridge. Particularly if the weather is warmer where you are. I always place it back in the dish I set it in and cover until I'm ready to eat and it will keep in there for weeks.
If you've crushed a lot of the biscuits into dust, you'll find it's OK to leave in an airtight cookie jar for around a week or two.
