
Roll on the reduced aisle I say and while the transitional Autumn period can't make its mind up about the weather, the bargains I keep finding suggest that about people's buying habits at the minute too.
That's what supermarket's surplus stock is telling me anyhow and since I have to go to my local coop daily to use their post office, I always meander to the cheap sections and came up trumps this morning... hopefully I won't be literally!
So this is today's soup combination: 19p for a pack of 4 apples, 19p for a pair of leeks (or even better if you have homegrown). I will always have a place in my stomach for a bowl of homemade soup; it's warming, comforting and filling when packed with veg and works out approx 12p per portion. Cheaper than chips and tastes lush!
I didn't do any sautéing this time as I don't have the time, so simply threw my ingredients in and sprayed with some Tesco Extra Virgin Olive Oil at the end to serve along with a grating of low fat cheddar (my favourite topping).

So I bloomin' hope you enjoy it and embrace the opportunity when a bargain vegetable comes your way. You could always cook it, freeze it and use it in a soup another day! Cheesy Leek and Apple Soup Maker Recipe
Equipment
Ingredients
- 330 g leeks trimmed and sliced (About 2 leeks)
- 300 g potato peeled and chopped
- 100 g Apples *Prepared weight
- 3 stock cubes beef or chicken
- 1 clove garlic peeled
- 900 ml water
- Pinch Cayenne pepper
- 1 teaspoon mustard powder
- 1 teaspoon rosemary dried
- 20 g lower fat cheddar grated for topping
- Seasoning
Instructions
- Throw everything in your soup maker if using and set to smooth or if using a pan, simmer for 20-25 minutes until everything is cooked and blend.
- I topped with low calorie olive oil spray and cheese, but some croutons from a wholemeal roll, toasted in the oven would be scrummy, too!
