Here's how to make my Carrot and Coriander soup maker recipe which is a tasty and healthy recipe. It can also be made in a pan or even a slow cooker. It's a timeless classic soup, a vegetable soup, an easy soup, and more importantly, a delicious soup!

This easy carrot and coriander soup is a classic flavour combination for the whole family, which makes it perfect if this is your first time making any homemade soups.
What I love about this recipe is that it's made with simple ingredients that you can usually find in your local grocery store.
Whether it's a light lunch or a warming main meal on a cold day, (whatever the time of year), we find the best way to serve it is with warm crusty bread with a knob of butter for dipping!

🛒 Ingredient Notes

Carrots peeled and chopped or grated - this root vegetable is the main ingredient which gives it a sweet flavour. Alternatively, you could swap for sweet potato.
Low calorie cooking oil spray - We use Frylight for an estimated Syn Free healthy soup on Slimming World or Weight Watchers plan.
Red onion chopped - adds flavour and some sweetness to the dish
Potato - creates a thick and creamy consistency
Garlic cloves - enriches the flavour with subtle mustardy tones
Ground coriander - for an earthy sweet tasty, or use coriander seeds
Chicken stock - (vegetable stock if wanting to make this soup vegetarian or vegan bouillon for vegan soup recipes).
Seasoning - this is salt and black pepper to taste
Fresh coriander - no need to remove the coriander stalks (cilantro stems) as we blend some in at the end, then some leaves as a garnish for extra flavour
Optional lemon juice - stirred in at the end to add a citrusy flavor. The acidity really makes it an extra delicious recipe!
📋 Instructions

Spray a large frying pan (or large saucepan) with Frylight and gently sauté the onions, garlic, and seasoning over medium heat until everything's softened.

Now add the remaining vegetables and fry another 5 minutes followed by the coriander. Then give everything a good stir and fry for a final minute.

Now transfer all the sautéed vegetables, stock cubes, and water (or chicken or vegetable broth into your soup maker). (See below for pan or slow cooker).

Set your soup maker to smooth function. Once finished, add a few coriander leaves, season to taste, blend again, and serve with chopped fresh coriander leaves.

🍲Stoves & Slow Cooker Method
If you're not using a soup maker, you could get your desired texture by using an immersion blender or stick blender.
- Simmer in a pan for 20-25 minutes until tender then blend
- Set your slow cooker on high heat for 3-4 hours or low heat for 6-7 hours
Once cooked and blended, add a few coriander leaves and blend again for more flavour.

👩🍳 Substitutions
Depending on your diet, here's a few simple swaps you can make:
- Keto - swap the potato and some carrots for the weight of a cauliflower or turnip
- Oil - if not following a low fat weight loss plan, then use olive oil, coconut oil, etc
- Gluten Free - ensure your stock and seasoning is gluten-free
- Vegetarian - for vegetarian soups, ensure you use vegetable stock or use vegan

⚖️ Variations
There are many ways you can spice up this nutritious vegetarian soup:
- Spicy - although mild, you could add some heat by making a Thai carrot soup with chilli flakes, coconut milk, curry powder, and lime juice instead of lemon
- Deluxe - for a creamy carrot and coriander soup, stir in heavy cream, crème fraîche, yogurt, or cheese for an extra creamy taste
- Kid friendly - use 1 teaspoon ground coriander instead of 1 tablespoon and stir in some pasta shapes like Mickey Mouse to your vegetable soups to encourage kids to eat more veggies!

Note: using grated carrots is a great way to make this carrot and cilantro soup an easy recipe as it breaks down in a large pot for an almost smooth soup.
❄️ Storage
If you have leftover soup, I recommend leaving it to cool to room temperature.
Then immediately store it in an airtight container in the fridge for up to 3 days and reheat until piping hot for your next light dinner.
Can you freeze carrot and fresh coriander soup?
I freeze all of my soups, including this sweet carrot soup in a lidded container that's freezer safe for up to 3 months. But I recommend not adding fresh cilantro until you're ready to eat it on the day.
Sometimes I heat it up from frozen in the microwave or defrost first then heat it in a large pan until piping hot.

It's full of flavour using herbs and spices and it has almost zero fats. It's also full of vitamins, such as vitamin C, vitamin K, calcium, iron, fibre, potassium, and much more.
Almost all of my soups are made in my Morphy Richards soup maker. And surprisingly to this day, I still get asked whether people need a soup maker to cook my recipe.
No, you don't need a soup maker, but I started adapting my favourite soups as not all recipes will fit in a soup maker. If you go over the max fill line, the machine won't work. And, I love how they don't require babysitting.

Carrot and Coriander Soup Maker Recipe
Equipment
Ingredients
- Frylight
- 1 red onion diced
- 100 g potato peeled & diced (roughly 1 potato)
- 1 clove garlic
- 580 g carrots unprepared weight, peeled & chopped or grated (roughy 4 to 5 carrots)
- 1 tablespoon ground coriander
- 1.2 litres water
- 3 chicken stock cubes
- Bunch Coriander leaves (cilantro)
Instructions
- Spray a large frying pan with Frylight and saute the onions and garlic until softened.
- Add the remaining vegetables and saute for another 5 minutes.
- Add the ground coriander and continue cooking and stirring for 1 more minute.
- Transfer to the soup maker or deep pan along with everything else except the fresh coriander.
- Set the soup maker to smooth. Or simmer in a pan for 20-25 minutes until everything is tender and blend.
- Add the coriander leaves and blend once more and serve with a garnish of more coriander.
- Enjoy!
