Cooking oil spray - for a low fat option if you want unofficial Slimming World carrot soup with red peppers. Or you could use a little olive oil
Red onion - diced which offers more sweetness and antioxidants than yellow onions
Garlic cloves - minced or grated and sauteed with the onions for a more depth of flavour
Carrots - peeled and chopped. You can use baby carrots like chantenay or frozen carrots. Their bright colour offers a good source of beta-carotene, vitamin A, K1, fibre and antioxidants.
Red bell peppers - this is 2 large red peppers or 4 small ones, deseeded and diced. Their vibrant red colour offers more antioxidants to support inflammations caused by arthritis more than green or yellow peppers. They're also sweeter.
Canned chickpeas - originally when I shared this recipe, I used a large potato to thicken for a creamy texture. But these days I use chickpeas or cannellini beans for more fibre, protein and other health benefits
Ginger - fresh or ground ginger for a classic carrot and ginger taste.
Chicken stock cubes made up with water - use vegetable stock for a vegetarian or vegan red pepper carrot soup
Tomato puree (tomato paste) - to add a slight tomato base
Seasoning - this is a pinch of salt and ground black pepper
Cheddar cheese - I recommend a mature or sharp cheese, grated. Or use a tub of Philadelphia cream cheese or dollop of Greek yogurt for an extra creamy soup
📋 Instructions

1. First, spray a large soup pot with cooking oil spray.
Then fry the onions and garlic until softened.

2. Add the ginger, salt, pepper and diced peppers.
Then fry for 5 minutes while stirring.

3. Add the stock, diced carrots and chickpeas.
Then cover with a lid and simmer over medium heat for 20-22 minutes until tender.
- Soup makers: transfer to the machine and select smooth
- Slow cookers: cook on high for 3-4 or low for 6-7 hours
- Instant Pot: set on pressure cooker mode and cook for 6 minutes.

4. Now add the cheese and blend with an immersion blender to a smooth consistency or use a food processor.
Add a drizzle of lemon juice, and garnish with your favorite things like fresh herbs, toasted pumpkin seeds - whatever you fancy!

👩🍳 Substitutions
Depending on your dietary needs, here are a few simple swaps you can make to this carrot and bell pepper soup:
Carrots - swap for an easy parsnip soup with red pepper, sweet potatoes, butternut squash, etc
Red peppers - swap for sweet peppers, green or yellow. Note: if using green, I recommend fire-roasted bell peppers to bring out the sweetness as they are more savory
Chickpeas - any hearty pulses should work to add nutrition and thicken the soup, such as cannellini, kidney beans or red lentils. Or for a cheaper option, swap for a large potato
Chicken stock - swap for vegetable broth if you are vegan or vegetarian, low sodium or gluten free if required
Cheese - swap for plant based if needed, or a cream cheese which I recommend for a smoother and delicious taste. Goats cheese is also divine offering tartness to balance the sweet flavours, or other fridge finds
⚖️ Variations
Here are some different ways you can enhance and truly personalise this recipe:
- Carrot and orange soup - this is a classic combination, which you can swap a little stock for orange juice and zest, (or lemon!)
- Deluxe - stir in a knob of butter at the end. You might also prefer red pesto for a herby taste or simmer with a bay leaf for a rich flavor
- Carrot and coriander soup - blend in a bunch of coriander at the end for one of our favorite soup combinations
- Thai version - add chilli, coconut and lime for a Thai vegetable soup
- Curried version - similar to my curried cauliflower soup, you can add 1 tablespoon of medium curry powder and a pinch of cayenne pepper for a spicy taste

Cheese grater - This isn't needed if you are using store bought grated cheese
Chopping board and sharp knife - the only bit of effort you need to do is trim and chop your vegetables
Measuring spoons and cups or measuring jug - you can find my ingredients in cups and grams with mls so you can enjoy this creamy courgette soup wherever you are in the world
Garlic press or grater. Or carefully smash with the side of a knife and use salt as an abrasive to rub with a knife into a paste
❄️ Storage
Storing - we prefer eating this no roasted red pepper soup with carrots freshly cooked, but it can be stored in an airtight container and refrigerated for up to 3 days.
Freezing - let the soup cool to room temperature and store in a freezer-safe sealed container for up to 3 months.
Reheating - If you want to eat the next day, defrost in the fridge if required and microwave until piping hot, or on the hob or stove.
💡Pro Tips
- If using a 1.6L soup maker, add the stock last as you may need to adjust accordingly to reach the maximum line
- Try using the best quality you can as it will give the best results
- Add roasted carrots and peppers to the soup for a richer, sweeter taste, but it does take longer
- Save seasoning the soup until last for the most control if you have sensitive tastebuds
🍽️ Serving Suggestions
Here are some serving ideas you can serve with your carrot red pepper soup:
Bread - Whether you have toasted sandwiches, buttering crusty bread, air fried croutons or cheese scones, these are all great for dipping
Homegrown sprouts - for extra nutrition and texture, you can stir in lentil or broccoli sprouts at the end once off the heat
Toasted nuts and seeds: for extra crunch top with toasted almonds, pine nuts, pumpkin seeds etc
Top with sour cream or yogurt: A dollop of sour cream or yogurt can add richness and creaminess to the soup
❓ FAQ
Yes, you can use frozen carrots and red peppers. I recommend thawing first before adding to a soup maker and they will be softer, making them perfect for a creamy soup
To make this soup gluten free, make sure you use GF stock.
Yes, you can make this soup thicker by adding a cornflour slurry or stir in xantham gum at the end.
