This comforting pudding takes inspiration from my apple and banana crumble pudding I made years ago - but it's even more gooey and delicious!
It's a great way to use up a bunch of overripe bananas or fresh bananas that need a new purpose - especially if you're tired of banana bread or banana crumb cake.

For the Banana Filling
- Butter - use cold butter for best texture, as it melts slowly when caramelising the fruit

- Plain flour (AP) - to thicken the syrup while baking
- Lemon juice - adds a subtle tang that balances the sweetness and deepens the caramel's flavour
- Pure vanilla extract - enhances the caramel flavour beautifully
- Ground cinnamon - the perfect spice for sweetness and warmth
- Salt - balances all the flavours.
- Ripe but firm bananas - sliced into thick 1-inch chunks to hold their shape, but don't worry if you have overripe ones - better in this dish than in the bin!
For the Crumble Topping
- Old-fashioned rolled oats - gives that signature crunchy oat texture
- Plain flour (all purpose flour) - for structure and binding
- Light brown sugar & granulated sugar - this combination gives both depth and crispness
- Ground cinnamon - adds warmth to the topping
- Cold unsalted butter (cut into little pieces) - use cold butter to keep that crumbly texture
- Walnuts pieces - adds crunch and nuttiness as it will toast while baking
Optional:
Add a pinch of nutmeg, or a spoon of sour cream to the syrup for richness dark chocolate chunks or other fruits if desired
📋 Instructions

1. Prepare the Bananas:
First, preheat the oven to 180°C / 160°C fan, gas mark 4 or 350°F and lightly butter a medium baking dish or 4-6 ramekins.
In a large bowl, cut the bananas into 1" (2.5cm) chunks toss with 1 tablespoon of flour to lightly coat and set aside.

2. Make the Caramel Syrup:
In a large pan, melt the butter, brown sugar, lemon juice, vanilla, cinnamon, and salt and simmer for 2 minutes until it starts to bubble and form a syrup.
Remove from the heat and carefully stir in the bananas until coated well and transfer the caramelised mixture into your prepared dish and spread in an even layer.

3. Prepare the Crumble Topping:
In a medium bowl (or mixing bowl), combine oats, flour, butter, sugars, and cinnamon.
Add cold butter cubes and rub together using your fingers or a pastry cutter until a crumbly mixture forms. You're aiming for small crumbs and a few larger buttery clumps.

4. Assemble:
Sprinkle the crumble mixture evenly over the banana filling.
Place in the preheated oven and bake for 25 minutes until the top is golden brown and bubbling at the edges.
Allow to cool a little before serving with a scoop of vanilla ice cream, a dollop of whipped cream, or warm custard.
