These deliciously simple buckwheat banana muffins are made with honey, sugar and butter. It's also gluten-free and suitable for coeliacs. Includes step by step images.

One of my new loves is baking with buckwheat flour. It tastes wholesome, hearty, and has a naturally sweet tang, sometimes described as "hoppy".
And the combination of these buckwheat flour banana muffins is a delight! Or, you could call them banana buns, if you're from Yorkshire, like me. But, the texture almost reminds me of my fondness for Jamaican ginger cake. Perhaps that's because it's golden in colour?
Furthermore, an added bonus is that they're Gluten Free and suitable for Coeliacs. Note, I don't have any food intolerances personally, but I do have a fascination and love for baking recipes with ancient grains.

What Is Buckwheat Flour?
It may come as a surprise, but buckwheat flour has nothing to do with wheat at all, making it gluten free. In fact, the seeds from a buckwheat plant are linked to rhubarb and sorrel.
It's pyramid like triangular seeds are a nutritious complex carbohydrate, offering a rich source of fibre, protein and several B vitamins. Other vitamins are magnesium, niacin, manganese and phosorus.
Once the seeds are milled, buckwheat flour is often used to make buckwheat banana pancakes, pasta and noodles. However, it also makes great buckwheat muffins, and alternatively, as a delicious buckwheat banana bread recipe!
Is Buckwheat Keto Friendly?
As buckwheat contains 33 grams of carbs per cup, it doesn't fit a low carb keto diet. That isn't to say you can't enjoy a slice of muffins.
However, it is a low glycemic food, which would be ideal along with natural sugar-free sweetener instead of sugar for a diabetic option.
Where To Buy Buckwheat Flour
You don't need to go to a specialist shop to buy buckwheat flour. Although, you're very unlikely to find it in your small village corner shop.
I purchased mine from Tesco, here in the UK amongst the other flours. But it can also be found in Sainsburys, Morrisons and Waitrose.

Equipment Used For Buckwheat Muffins with Banana
*If you don't have a stand mixer, then a mixing bowl and electric whisk to cream the butter and sugar works perfectly.
Or a wooden spoon and some elbow grease! Although, it does help if your butter is at room temperature.

How to Bake Gluten Free Banana Muffins With Buckwheat Flour

Jump to RecipeBut, let's first break down my experience of baking buckwheat flour recipes. I have used the tried and tested style of a pound buckwheat banana cake, where almost everything is of equal weight.
But, instead of 150g of eggs in my buckwheat muffins recipe, I used 2 large eggs and 2 mashed bananas for flavour and moisture. And, with buckwheat being higher in protein, it absorbs more moisture than low protein flour, such as cake flour.

Step by Step For Easy Banana Muffins
- Preheat your oven at 160c fan / 180c conventional / gas mark 4 / 350F
- Butter and line a 12 hole muffin tin with paper cases
- Now cream the sugar, honey and butter with an electric mixer until light and fluffy
- Slowly whisk in the eggs, one at a time
- Gently fold in the flour, gf baking powder, and mashed bananas until you can JUST see traces of flour left
- Spoon equally into the 12 muffin holes
- Bake in the oven for 20-25 minutes until you can gently press them and they bounce back
- Remove from the oven and allow to cool in the tin, then transfer to a cooling rack

Tips for Baking Banana Buckwheat Muffins
It took me two experiments to achieve what I think is the best recipe for banana muffins using buckwheat. In fact, when I baked these GF banana bread muffins as bread initially, it collapsed in the middle.
But the flavour was so good, I was determined to experiment again. So, here are my two main tips I learnt while baking buckwheat banana muffins and bread.
- Don't top your buckwheat banana buns with banana for decoration as they're too heavy for the batter. Everything will convincingly rise, then halfway through, you risk it collapsing in the middle
- Avoid the temptation of adding more baking powder for a better rise. Too much can cause it to rise too soon in the oven, then sink, not forgetting, adding a bitter taste

Other Variations
Firstly, if you have more ripe bananas, this buckwheat banana cake batter with 2 and 3 very ripe bananas, and both worked perfectly. However, I prefer to use 2 where possible to avoid dense results.
Buckwheat Banana Cupcakes
Note, the easiest thing you can do with these banana muffins is to add icing on top for banana cupcakes.
You could use a drizzle of 50g of icing sugar and 1 tablespoon of water, then mix and drizzle. Or, use a cream frosting for a taller cupcake.
Banana Mini Muffins
For easy banana mini muffins like my mini strawberry cupcakes recipe and can use mini paper cases and bake 24 mini banana muffins. I recommend using the same recipe, but baking for 12-15 minutes at the same temperature.
Blueberry Banana Muffins
You could fold in a handful of blueberries into the mixture. But, I recommend using frozen ones to avoid them bursting and leaking everywhere while baking.
Buckwheat Apple Muffins
I've never made apple banana muffins with buckwheat flour. But I have baked a pound cake with diced pears and chocolate. My tips would be to either dice the apples as finely as possible and dust them in flour. Or, fold in two grated apples instead of bananas, but use 3 eggs instead of 2.
Simple Buckwheat Sponge Cake Recipe
Even without bananas, this recipe will still work. But for a buckwheat sponge cake, I recommend using 3 large eggs, instead. OR, an even better method (if you have scales), is to weigh your cracked eggs first, then match them with equal weights of the other main ingredients.
You may want to add a tablespoon of milk to loosen the mixture and create a lighter bake. Then divide the mixture and bake in two buttered and lined 6-7" round tins for around 30 minutes.
Buckwheat Banana Bread
Use the same buckwheat banana muffin recipe for banana bread. Then butter and line a 2lb loaf tin and bake for 50 minutes at the same temperature. I recommend testing with a cake skewer. Once cooled, I decorate with an icing sugar drizzle and top with dehydrated banana chips.

Do Banana Muffins Need to be Stored in the Fridge?
To store these buckwheat banana muffins recipe, I recommend storing them at room temperature for up to 5 days in an air-tight container, lined with kitchen paper.
Storing banana cake or bread in the fridge can change the texture, making it more dense.
How to Freeze Banana Muffins
It's very easy to store banana buckwheat muffins in the freezer. Again, I recommend an air tight container and freezing for up to 3 months.
To freeze banana bread, I recommend slicing it up first, separating each sheet with baking paper, and storing them in a freezer-safe air-tight container.
That way, you can take out a slice to defrost as and when and not feel forced to indulge in a short period of time.

Ingredients
- 150 g Buckwheat flour I use Doves Farm Organic buckwheat wholegrain flour
- 150 g Unsalted butter softened (⅔ cups + 1 tbsp)
- 150 g Golden caster sugar (¾ cups + 1 tbsp)
- 2 large eggs
- 2 teaspoon ground cinnamon
- 2.5 teaspoon gluten free baking powder
- 1 tablespoon honey
- 2 bananas ripe and mashed (*Approx 190g in weight)
