Boneless skinless chicken breasts - or for the best flavor, use juicy dark meat like boneless skinless chicken thighs. These can be diced into small pieces or cut into long strips
Light soy sauce - to add salt to the sweeter ingredients for the right balance
Rice vinegar - or you can swap for saki, red wine, dry sherry or apple cider vinegar
Honey - or swap for brown sugar, pineapple juice or natural sweetener for low carb
Oyster sauce - which adds a delicious sweet and salty umami taste
Ground ginger powder - or use grated fresh ginger if you have it
Garlic powder - this can be fresh garlic cloves salted and turned into a paste with the large flat side of a knife
White pepper - to add milder heat while also being invisible on the finished teriyaki chicken skewers
Sesame oil - for a really delicious nutty taste
Optional - chilli powder or flakes

1. First, mix all of the marinade ingredients in a large bowl until combined.
Hold back 2 tablespoon for brushing or basting.

2. Dice the chicken into 1" chunks or even chicken strips.
Place chicken pieces in the marinade, stir until they are all coated.
Cover with clingfilm and leave in the fridge for a minimum of 30 minutes or overnight. Or place it in a freezer bag.

3. At least 30 minutes before cooking, soak the bamboo skewers in cold water to prevent them from burning.

4. Next, thread chicken tenders onto skewers that fit your air fryer, or grill, etc.

5. Brush your grill with oil.
Then place the threaded chicken skewers on a medium-high heat.
Air Fryers: cook at 180c fan or 400 degrees F on each side for 5 minutes or use a George Foreman double sided grill.
Oven: place on a lined baking sheet and bake in a preheated oven at 200c fan, 220c conventional, gas mark 7 or 425F for 15-20 minutes and turn at the halfway point.

6. Grill each side of your chicken skewers for 3-4 minutes until deep golden brown and charred.
Turn regularly while regularly basting and brushing.
Then check the internal temperature with a meat thermometer to make sure it has reached 74c/ 165F.
Tip: for the best flavor, drizzle with fresh lemon juice, toasted sesame seeds, and some sliced spring onions (scallions).

Chicken - swap for diced turkey, pork, tofu, Quorn chicken style pieces or salmon chunks

Oyster sauce - swap for gochujang paste for a hot, but delicious sweet, savory taste

Freezing - cool to room temperature and again, store in a freezer-safe container for up to 3 months.
