A simple guide on how to chargrill chicken in the oven if you don't have a BBQ.

My fiance often tells me that spices were traditionally used to hide fermented food when fridges weren't invented, but I don't care because I'd be so bored without them.
And for our dinner a few nights ago, he asked for some simple char-grilled chicken (shame it was raining, eh?), so out came my much loved Denby cast iron griddle pan.
I love it and you can cook on the hob and transfer it straight in to the oven, giving your meat the coolest grooves.
But getting back to the spices, notice I only using basic seasoning, so please, I urge you, rub it with ginger, cumin seeds or even some peri peri seasoning if you're feeling it!
(It's stupidly only just dawned on my that I could have done whatever I wanted with mine!) Oh well, now we know.
Recipe
- Frylight
- 1 chicken breast per person
- Seasoning
- Preheat your oven on 200 c fan/220c/Gas mark 6/400F
- Season the chicken with whatever you want.
- Spray an oven proof griddle pan with frylight and sear the chicken, five minutes on both sides.
- Now place it in the oven for 30 minutes.

- Cooking oil spray
- 4 Chicken breasts
- Seasoning Of your choice
Instructions
- Preheat your oven on 200 c fan/220c/Gas mark 6/400F
- Season the chicken with whatever you want.
- Spray an oven proof griddle pan with frylight or other low calorie cooking oil spray and sear the chicken, 5 minutes on both sides.
- Now place it in the oven for 30 minutes.
