It's a common misconception that this London Broil recipe is British. But it's actually a North American dish, typically cooked with flank steak that's been marinated for hours before grilling or broiling, then slicing.
However, instead, my London broil steak slices are marinated for hours while cooking in a slow cooker. You can crisp in a frying pan before cooking, or after.
Either way, it creates the perfect recipe for a fork-tender London broil, which is great for roast beef dinner, tasty beef stew with crusty homemade bread, or in sandwiches.

- Brisket - the key is to use a good cut of meat with long muscle fibers that become tender after a long cooking time. Or you can just use whatever is accessible in your local grocery store
- Rapeseed oil - or use avocado oil, olive oil, etc for a smoother taste
- Beef stock cube - or chicken, vegetable, etc
- Potatoes - these are chopped white or red potatoes. Or use baby potatoes as they only need washing and taste sweeter.
- Carrots - chopped into batons, or use baby carrots like Chantenay
- Celery - cut into batons or sliced to add flavour. Or you could add diced celeriac
- Onions - halved and finely sliced, or you could use onion powder
- Rolled oats - either jumbo or quick oats as it will help to naturally thicken the gravy while gluten free
- Seasoning - this is kosher salt and black pepper
- Cup of water - or a cup of beef broth, or 1 cup chicken broth
- Mustard powder - for a warming tang
- Brown sugar - any soft brown sugar like light or dark muscovado
- Bay leaves - for a warming taste, or use a bouquet garni for a delicious herby taste
- Garlic cloves - or garlic powder for a more complex taste
- Butter - for a quick sear, especially at the top of the meat for best results at the beginning to seal the meat and be easier to slice at the end. You may also want to do it at the end too for crispy brown meat

1. Add butter to a large nonstick skillet.
Then sear all sides of the chuck roast over medium-high heat while the strings are left on.
This should take about 1-2 minutes.

2. Transfer steak to the slow cooker.
Now add the remaining ingredients.

3. Place the lid on top and choose one of the following cooking times until the beef is tender:
- High temp: 4-5 hours
- Low temperature: 7-8 hours

4. Remove the slow cooker beef joint from the crock pot, then slice it into thin strips on a cutting board.
Now put back in the marinade and serve.
Tip: if you want to retain as much juice in your slow cooker pot roast, then you can line your lid with aluminum foil.

👩🍳 Substitutions
Here are a few swaps you can make to this crock pot London broil recipe depending on your dietary requirements:
- Brisket: You can use any cut of beef, such as flank steak, sirloin steak, or any piece of meat you wish, such as pork, chicken breasts, etc
- Potatoes - swap for turnip or swede for lower carb. Or use sweet potatoes, butternut squash, etc
- Oil or butter - if following a low fat diet, swap for low calorie cooking oil spray. You may also want to remove any excess fat after searing with paper towels
- Porridge oats - this is my favorite way to thicken gravies and sauces, but you could stir in cornstarch slurry, or use plain flour, Xantham gum, etc
- Stock - use gluten free or homemade stock. We've also tried without it and it still tastes delicious naturally flavoured
- Brown sugar - swap for a sweetener version, coconut aminos, or balsamic vinegar

Here are some other ways you can enhance this slow cooker London broil with potatoes and carrots:
- Hot - you could add some pepperoncini peppers or jalapenos to give the dish some spice and heat
- Extra veggies - why not bulk up the dish by stirring in garden peas towards the end, green beans and garnish with sliced green onions (scallions)
- Tomato based - you could add some tomato paste, or swap water for tomato sauce such as passata
- Deluxe - after searing the beef, you could deglaze the pan while reducing a glass of red wine by half of its liquid to remove the alcohol

Storing - we prefer eating this Lond broil freshly cooked, but it can be stored in an airtight container and refrigerated for up to 3 days.
Freezing - cool to room temperature and again, store in a freezer-safe container for up to 3 months.
Reheating - If you want to eat the next day, defrost in the fridge if required and microwave until piping hot, or on the hob or stove.

If you don't have a slow cooker, you could treat this as an easy pot roast and cook it in its own gravy. I would preheat my oven at 160c/140 fan/gas mark 3/325F.
Place the brisket along with everything else in a casserole dish, cover, and cook for 2 to 3 hours.
While I've only slow cooked my London Broil crock pot recipe, I have made many stews in an Instant Pot. Usually, I find joints of meats in a multicooker take about 55 minutes around this size.
Yes, providing you use a large cast iron pan to fit everything in. We love doing this in the winter on the multi-fuel stove, which usually has a lower temperature, so will leave it to cook for 8-10 hours.
To ensure your beef is safe to eat, I recommend testing with a meat thermometer in the middle to check the internal temperature which should be a minimum of 160°F or 70 degrees celsius.
