This meatless chorizo soup recipe is full of soy mince, herbs, spices, tomatoes and other vegetables. It's perfectly low fat for a Slimming World diet.

I love a spicy chorizo soup, but it can be quite off-putting when it comes to its weighing and calorie counting. There are just too many types out there! And some days, I'd much rather save my treats for a dessert, so I've been on a mission to take its essential flavours for a yummy soup.
This really is my favourite kind of recipe when souping it up. There's nothing like take something that you love and turning it in to something completely different. In fact, some of my favourite soups were made this way for my Soup Maker eBook, but today's recipe is totally new.
Also note: There is absolutely no stopping you taking these herbs and spices and marinating some meat instead, tightly wrapped in clingfilm before grilling.
And this recipe ticks all boxes to please a crowd and here's why: It's vegetarian but can easily be swapped for browned off extra lean beef mince or healthy cooked sausages. It fits a soup maker as well as a pan (a bonus in my eyes); and it's incredibly easy yet its flavours are rich and tasty.
There may be a jaw dropping amount of ingredients listed below, but all the spices are cupboard friendly and there's minimal prep; just chop up a couple of veggies and chuck everything in the same pot to cook.

Recipe - Serves 4
- 1 onion, chopped
- 3 garlic cloves, minced
- 100g mushrooms, sliced
- 200g vegetarian mince meat (I used Aldi's, estimated as syn free on Slimming World)
- 1 x 400g tin of chopped tomatoes
- 1 teaspoon balsamic vinegar
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- ½ teaspoon cumin
- 1 teaspoon ground coriander
- 2 teaspoon mild chilli powder
- ⅛ teaspoon cayenne pepper
- 1 teaspoon onion granules
- ¼ teaspoon salt
- 2 tablespoon paprika
- Sprinkle of ground black pepper
- 2 & ½ vegetable
- ½ teaspoon white wine vinegar
- 1 tablespoon tomato puree
- 800ml water
- Fresh herbs to stir in at the end; I used basil & parsley
- Chuck everything in to your soup maker except the fresh herbs and set to smooth. Note: if using a pan, simmer for around 25 minutes for a good infusion.
- Season to taste if you wish and stir in any fresh herbs if using.

Ingredients

- Season to taste if you wish and stir in any fresh herbs if using.
