A comforting and easy stewed sausage hotpot recipe, cooked in a thick gravy with chunks of swede, carrots and other low carb vegetables. After bringing everything to a boil, we cook the sausages in oven before serving. I'll also show you how to turn this one pot keto recipe into an unofficial Slimming World sausage hotpot. Includes step by step photos to follow along.

Our family love a good stewed sausages in gravy. Most hotpot recipes, in fact. They're always filling and soothing and don't need any babysitting once you've seared the meat.
But half way through 2020, I discovered that my low fat diet full of carbs was preventing me from losing weight. Actually, it was the reverse, despite counting calories and regular exercise in the morning and working at my DIY treadmill desk.
And after ditching most carbs while feeling satisfied on a "good fats" Mediterranean diet, I started to see the reverse. So, say hello to my keto sausage hotpot using swede chunks instead of sliced potato.

How to Make Stewed Sausages Hotpot

Jump to RecipeIf You Prefer Stewed Sausage Hotpot With Potato Topping (Or Swede)
You'll notice that this is a super easy sausage hotpot where everything is cooked in the pot together. But you might prefer a more traditional Lancashire sausage hotpot with sliced potatoes baked on top. If so, you can use the same ingredients in this recipe, but follow my minced beef hotpot recipe instead.
- First, preheat your oven at 160c fan/ 180c conventional/ 350F/ Gas mark 4.
- In a large casserole dish, add the oil and sear the sausages with a pinch of salt and pepper.
- Now add the leeks and continue frying for 3 minutes.
- Stir in the rolled oats (or stir in the plain flour until you see no lumps) and cook for a minute.
- Throw everything else in, except the apple sauce and bring to a boil.
- Cover and place in the oven for 1 hour 30 minutes.
- Add seasoning to taste if you wish, the optional apple sauce and any extra water if desired.
- Serve and enjoy alone or with extra steamed low carb veggies.

Can I Stew Sausages in a Slow Cooker?
Yes! Turning this into a sausage stew slow cooker recipe is extremely easy. But, make sure you sear the sausages in oil or Fry Light so they don't fall apart in the hotpot and the flavour is richer.
If you prefer crock pot sausages to crumble in the pot, then you can skip the searing bit. However, I do recommend adding a tablespoon of applesauce and salt and pepper at the end if you feel it needs it.
To cook, cover and either set on low for 6-7 hours, or high for 3-4 hours.
Can Stewed Sausage Cook in a Pressure Cooker?
Whether you want to make a pressure cooker or instant pot sausage hotpot or stew, this is actually the quickest method if you can.
But searing the sausages first in oil is even more important as they tend to crack and fall apart under pressure. (They'll still crack, but not as much).
Once you've seared, bring everything to a boil, then cover and cook on pressure cooker mode for about 25 minutes.
Stove Top Sausage Hotpot
If you really prefer, you could simmer your hotpot on low, directly over heat for 1 to 2 hours with the lid on. This isn't my favourite method as I tend to stop every time I walk past the pot and stir.

Stewed Sausage Unofficial Slimming World Hotpot Alternative
If a low carb (keto) hotpot isn't on your agenda, but a low fat healthy Slimming hotpot is, then I recommend these adjustments.
- Use plenty of Fry Light to sear your sausages and a very good non stick pan
- Pick low fat sausages for or Slimming World sausages from Iceland
- Opt for rolled oats to thicken as opposed to flour, OR:
- instead of flour, use 50g of red lentils to make sausage and lentil casserole
- Use a red wine stock pot instead of bottled with an additional 200ml of water
Vegetarian Hotpot Option
You could easily make my recipe as a vegetarian sausage hotpot by simply swapping sausages and using vegetable stock.
What are the Best Slimming Vegetarian sausages?
The best sausages really is down to personal preference. But many on the internet recommend the following:

- The Vegetarian Butter's Little Willies
- Tofoo Co. Sizzlers (Vegan tofu sausages)

Can You Reheat Sausage Hotpot?
You can reheat sausage hotpot over the hob, microwave or oven. However, it will thicken when stored in the fridge. So add a splash of water and reheat until it is piping hot.
How Long Does Stewed Sausage Hotpot Keep?
Once cooked, allow to cool and store in the fridge for up to 3 days or in the freezer for up to 3 months.

Stewed Sausage Hotpot Recipe (One Pot Keto)
Equipment
Ingredients
- 2 tablespoon olive oil Or Fry Light
- 800 g 97% pork sausages (12 sausages) Ideally Lancashire sausages
- 1 swede (about 650g)
- 2 large leeks
- 1 cup garden peas (about 170g)
- 5 carrots peeled and cut into half circle chunks
- 2 tablespoon dried rosemary
- Pinch sea salt
- Pinch black pepper
- 1 & ⅔ cups water (400ml) *or a bit more if you prefer it thinner
- 1 cup red wine (200ml)
