This deliciously golden apple and raisin cake recipe uses up frozen and thawed eating apples, folded into an easy cake batter with cinnamon, cocoa and raisins. It's perfect as an apple traybake alongside a cup of coffee or warmed up with a good dollop of custard.

I'm back with more baking recipes using a glut of apples off my tree. I must have cored, chopped and froze at least 10kg and they've been taking up 3 freezer drawers.
But, I've now narrowed it down to one drawer, because I've been busy showing you how to bake with freezer apples. So far I've made:
- Easy slow cooker mincemeat
- Made a Christmas cake using ready made mincemeat

I'm not one for wasting perfectly good food, but I also discovered this year that when freezing apples, the texture completely changes. Which is why I've found defrosted apples needs its down dedicated recipe.
It's actually the perfect lockdown cake! But I'll also talk you through how you can bake apple cake with Bramley or raw eating apples if you can buy fresh.

Easy Dorset Apple Cake With Raisins
There's not a lot you can get wrong with this apple raisin cake. (Or, you could closely call it a Dutch apple raisin cake). But it's very much a throw it all in the mixer cake.
But the key part of making any apple cake, in my opinion, is making sure the apples or raisins don't sink to the bottom of the cake.
That's why my foolproof method is to mix the apples and raisins with a tablespoon of flour and set aside until we're ready to fold into the batter.

What Apples Can I Use?
Baking With Frozen Apples
Firstly, to make these apple blondies, I used 500g of frozen apples, which I later defrosted, drained and chopped, becoming 300g.
When freezer apples are defrosted, their texture becomes more robust for baking as they lose 40% of their water. You can also bake them in this apple raising pudding unpeeled. In fact, it's more nutritious!
If Baking With Fresh Bramley Apples (Or Eating Apples)
If baking with cooking or eating apples, then use about 375g of chopped apples. Or, you might like to try an apple and pear cake and add 50g of raisins.

Other Variations
While I use a 20cm squared baking dish, you can afford to use a slightly bigger baking dish to create an apple tray bake recipe. Or, use a:
- 27cm fluted cake tin to make it an apple raisin bundt cake
- 20cm/8" round apple cake
- Use any size muffin tins, but I would mix all the wet ingredients first before gently folding in the flour, apples and raisins
- Use a 2lb loaf tin for an apple and raisin loaf cake
Alternative Apple Cake Ingredients
Also note, it's not essential to use cocoa powder. I just wanted a subtle hint of chocolate, using lockdown ingredients.
The same goes for the types of sugar. I used a mix here, but if you want a paler colour, use purely caster sugar or golden caster sugar.
You could also use other dried fruits combinations, such as:
- Chopped dates and raisin
- Apple, walnut and raisins
- Apricot and raisin
- Banana and raisin
- Carrot and raisin
- Cherries
- Make run and raisin cake using rum essence instead of almond

How to Make Raisin Cake With Apples

Apple and Raisin Cake
Equipment
Ingredients
- 160 g butter softened
- 375 g cooking or eating apples Or 500g frozen apples then defrosted and drained to approx 300g, chopped
- ½ lemon juice
- 100 g dark brown soft sugar
- 100 g caster sugar
- 250 g plain flour
- 1 tablespoon plain flour to mix the apples with and prevent sinking
- 3 large eggs
- 2 teaspoon ground cinnamon
- 2 tablespoon cocoa powder
- 50 g raisins seedless
- 1 & ½ teaspoon almond extract
- 2 teaspoon baking powder
Instructions
- Preheat your oven at 160c fan / 180c / gas mark 4.
- Butter and line a 20cm squared baking tin or 20xm x 30cm for an apple and raisin traybake.
- Squeeze the lemon juice over the apples and stir. Then mix in the tablepoon of flour set aside.
- In a mixer, or using an eletric whisk, combine everything else, except the apples and raisins to a smooth cake batter.
- Fold in the floured apple chunks and raisins.
- Pour the apple raisin cake mixture into the tin and level with a spatula and bake for 40-45 minutes until slightly springy.
- Remove from the oven and allow to cool before cutting and serving alone with coffee or a dollop of custard.

Glad you enjoyed 🙂 I can't see why it can't be frozen. I'd leave it in a container while defrosting though to keep it's moisture.
